Chocolate Mint Candy Recipe: How to Make It image

I never made candy before until I tried this recipe. Now I make it every holiday. —Kendra Pedersen, Battle Ground, Washington

2 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk, divided
2 teaspoons vanilla extract
6 ounces white candy coating, coarsely chopped
2 to 3 teaspoons peppermint extract
3 drops green food coloring

Steps:

  • In a heavy saucepan, melt chocolate chips with 1 cup milk. Remove from the heat; stir in vanilla. Spread half into a waxed paper-lined 8-in. square pan; chill for 10 minutes or until firm. , Meanwhile, in a heavy saucepan over low heat, cook and stir candy coating with remaining milk until coating is melted and mixture is smooth. Stir in peppermint extract and food coloring. Spread over bottom layer; chill for 10 minutes or until firm. , Warm remaining chocolate mixture if necessary; spread over mint layer. Chill for 2 hours or until firm. Remove from pan; cut into 1-in. squares.

This reimagined version of the traditional holiday cookie features a gingerbread thumbprint with a white and milk chocolate center. It’s an irresistible combination of sweet gingerbread spices and creamy chocolate.

3 cups flour
2 tsps McCormick® Ginger, Ground
1 tsp McCormick® Cinnamon, Ground
1 tsp baking soda
1/4 tsp McCormick® Nutmeg, Ground
1/4 tsp salt
3/4 cup (1 1/2 sticks) butter softened
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg
1 tsp McCormick® Pure Vanilla Extract
1/4 cup granulated sugar
60 white and milk chocolate swirled kiss-shaped candies

Steps:

  • Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Set aside. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.
  • Preheat oven to 350°F. Shape dough into 1-inch balls. Roll in granulated sugar to coat. Place 2 inches apart on ungreased baking sheets.
  • Bake 8 to 10 minutes or until edges of cookies just begin to brown. Immediately press a white chocolate candy into center of each cookie. Remove to wire racks; cool completely. Store cookies in airtight container up to 5 days.

  • Melt the chocolate. Place the peppermint sticks in a heavy, locked plastic bag and crush them fine by whacking and then rolling them with a rolling pin. They should have about the same consistency as crushed ice. When the chocolate is melted, stir in the peppermint oil. Stir in all but 2 tablespoons of the crushed peppermint pieces and spread the mixture out on the cookie sheet, about 1/4-inch thick. It will not fill the pan completely. Sprinkle the reserved peppermint stick over the top. Let set at room temperature until hardened, about 2 hours. (Or, refrigerate for 30 minutes to harden more quickly.) Use your hands to break into pieces. Store in an airtight container for up to 2 weeks.
