These Seasoned Baked Red Potato Wedges are sprinkled with olive oil, seasoned with garlic salt, parsley, Mrs. Dash seasoning, baked to perfection, and are a wonderful, quick meal that is absolutely scrumptious. A little crunchy on the outside, perfectly soft on the inside and so tasty! It makes a perfect side dish, for dipping into ketchup, ranch, or thousand island sauce. Or for a fantastic dinner.

I made these for our New Year's dinner with pork chops and green beans. Everyone loved them!

6 red potatoes, cut into wedges
2 tablespoons olive oil
2 teaspoons onion powder
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon garlic salt
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread potato wedges in a single layer on a baking sheet and coat with olive oil. Mix onion powder, chili powder, garlic powder, and garlic salt in a small bowl; sprinkle over potatoes and toss to coat evenly.
  • Bake in preheated oven until potatoes are tender, 30 to 35 minutes. Season with salt and black pepper.

These were an experiment I did for tonight's meal and I think they turned out pretty well. They aren't out and out low fat but the only fat used is extra virgin olive oil so it is a good fat and a little bit of fresh Parmesan cheese and you could use the reduced fat version of that if desired. So, far better than deep fried French fries.
