This is a great sandwich bread. Makes a great grilled cheese or Rueben sandwich! I like to form this bread in a round circle, and bake free form in the la cloche!

1 cup warm water (110 degrees F/45 degrees C)
½ cup Dijon-style prepared mustard
2 tablespoons olive oil
1?½ tablespoons molasses
2 cups unbleached all-purpose flour
? cup rye flour
? cup whole wheat flour
1?½ tablespoons vital wheat gluten
2?½ teaspoons active dry yeast

Steps:

  • Place all the ingredients in the bread machine pan in the order suggested by the manufacturer.
  • Select Basic or White Bread setting, and start the machine.

1 (425 g) can tuna in water
1 lemon, rind of, grated
1 lemon, juice of
2 finely chopped pickles
1/4 cup spreadable reduced-fat cream cheese
8 slices rye bread
1 small red onion, sliced
lettuce leaf, of your choice

Steps:

  • Drain the tuna and mix with the grated lemon rind, lemon juice, pickles and cheese; season to taste with salt and pepper.
  • Spread mixture over 4 slices of rye bread and top with sliced onion and lettuce leaves and top with remaining slices of rye bread.
  • Cut in half to serve.

  • The rye bread is from the King Arthur catalog. I made a few substitutions and used some things I had on hand that were slightly different from what the original recipe called for. But it makes a fantastic sandwich bread, great for ham or possibly Reuben Sandwiches. The KA in the ingredients stands for King Arthur. You can purchase these two ingredients from them. Place all the ingredients in the pan of your bread machine in the order listed by the manufacture. Program for basic bread and press start. Check the dough after a few min and make sure it is hard and slightly sticky. If not add in flour or possibly water to fix the problem.
