grease from frying country ham
1 -2 tablespoon flour
1 -2 teaspoon sugar
1 cup hot tap water
1/2 cup strong coffee
1 beef bouillon cube
1 tablespoon butter (optional)

Steps:

  • Heat grease, add flour and sugar until dissolved and incorporated with ham grease. Add water, coffee and bullion cube, stir until gravy is well blended. Turn down heat and cook for 1 minute, add butter and cook for 1 minute longer. Serve immediately with hot biscuits or grits.

Red Eye Gravy is a delicious pan gravy typically served with country ham. Our version uses Kitchen Basics® Beef Bone Broth for a hearty, savory base. Stir in coffee to add additional richness, and enjoy over ham steaks, biscuits or grits.

1 pound ham steak
2 tbsps butter
3 tbsps flour
1 container (8.25 oz) bone broth beef
1/2 cup brewed medium roast coffee
1/2 tsp sugar
1/8 tsp salt

Steps:

  • Cook ham in medium saucepan on medium-high heat until lightly browned on both sides. Set aside; keep warm.
  • Reduce heat to medium. Melt butter in pan. Add flour; cook and stir with whisk until it is the color of peanut butter, about 5 minutes.
  • Slowly add bone broth, a little at a time, while whisking constantly. Add coffee, sugar and salt; cook until gravy begins to bubble and thickens slightly, whisking occasionally. (Gravy will continue to thicken upon standing.) Serve over ham, biscuits or grits, if desired.

  • Into the pan that the ham was cooked in (or use bacon grease if you don't have ham juices), add the butter. Once melted, add 1/4 cup of the flour and whisk to combine. Continue adding flour, whisking constantly, until a smooth paste is achieved. Cook the roux over a medium heat until you get a nice deep golden color, about 3 minutes. Add the milk, whisking the whole time to prevent lumps forming. Cook until thick and season to taste. Serve over biscuits!
