These mini apple pies may be small, but they’re big on flavor! Little hands can help shape pie crusts with cookie cutters, which means you can have family time while you bake and eat. Pillsbury™ Mini Apple Pies come together fast with a Pillsbury™ pie crust cut into rounds and pressed into a muffin cup. Build the individual apple pies with apples, sugar, flour, cinnamon, and vanilla and put the mini pies into the oven for 20 minutes.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
2 apples, cored, finely chopped (about 1/4-inch pieces)
2 tablespoons sugar
1 tablespoon All-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon vanilla

Steps:

  • Heat oven to 425°F. Remove crust from pouch; unroll on work surface. Using large round cookie cutter, cut out rounds. Gather up any scraps; reroll with rolling pin and cut out more rounds to make a total of 10. Press each crust round into ungreased regular-size muffin cup.
  • In medium bowl, stir together apples, sugar, flour, cinnamon and vanilla. Divide mixture evenly among crust-lined muffin cups.
  • Bake 18 to 20 minutes or until crusts are golden brown and mixture is bubbly. Cool completely in pan, about 30 minutes. With knife, loosen edges; remove mini pies from muffin cups.

¼ cup butter
2 apples - peeled, cored, and diced
¼ cup white sugar
2 tablespoons ground cinnamon
1 tablespoon vanilla extract
1 pinch salt
2 cups vegetable oil for frying
2 (10 ounce) cans refrigerated biscuit dough

Steps:

  • Melt butter in a skillet over medium heat. Cook and stir apples, sugar, cinnamon, vanilla extract, and salt in the melted butter until the apples are tender, about 5 minutes.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Flatten biscuit dough on a flat work surface. Place a portion of apple filling into the middle of each dough portion. Fold dough around the filling and pinch the edges together to seal.
  • Fry pies in the hot oil until golden brown, about 10 minutes. Drain on paper towels.

  • Preheat oven to 350°F (180°C). Roll out dough and use the Baker's Roller® to flatten and enlarge dough.  Use Pizza & Crust Cutter to cut into 12 squares. Place dough in the Brownie Pan, allowing corners to drape over. Using the Medium Scoop, top with one scoop of apple pie filling.  In a separate bowl, mix sugar and cinnamon together. Add to the top of each square. Pull corners to the middle and add another dash of the cinnamon/sugar.  Bake 15 -17 minutes or until golden brown. Remove from pan immediately. Serve with ice cream, if desired.

  • 1) In the bowl of standing mixer fitted with a paddle attachment, add the flour, vanillina, orange zest, salt and sugar and mix briefly until combined well. 2) Add the cold butter and shortening and mix until the butter and shortening are well distributed throughout the dry ingredients and there are little bits of them running through the mixture. 3) Add the egg yolks and mix until the dough starts to come together. 4) With the mixer running, add in a tablespoon of ice water at a time until the dough starts coming together well. 5) Dump on a floured surface and knead the dough long enough for it to come together. 6) Divide the dough in half and wrap each piece in some plastic wrap making sure to form it into a disk as you�re wrapping it. Place the pieces of dough into the fridge for about an hour. 7) Preheat the oven to 375 degrees, spray 2 muffin tins with non-stick spray and set aside. 8) To make the filling, add the apples, sugar, lemon juice, salt, cinnamon, flour and orange zest in a bowl and stir together to mix everything well. 9) On a well floured surface, knead each piece of crust for just a minute to warm it up a bit, then using a floured rolling pin, roll out the crust to about ⅛� thick. Using a 3 �� bisquit cutter and 2 �� rounds (you need a top and bottom for each one) cut out rounds (re roll the scraps and roll out as many as you can) make little slits on half of the rounds. 10) Spray a couple of muffin tins with non stick spray, line the bottom of each one with the larger piece of dough and make sure you place it properly so each one comes up the sides. 11) Add a little filling in each one, brush the tops of each one and top it with the smaller circle of dough, pinch all the sides together so both pieces of dough meet. Brush the tops with some egg wash and sprinkle the top with a little raw sugar. 12) Bake them for about 20 minutes or until golden brown. Allow to cool completely before serving.
