Ingredients

1 pound white American cheese (such as Land O'Lakes®), sliced
1 cup half-and-half, or as needed
½ teaspoon ground cumin
¼ teaspoon ground black pepper
¼ teaspoon salt
¼ teaspoon red pepper flakes, or to taste
2 tablespoons diced jalapeno pepper
⅛ teaspoon chili powder

Steps:

Place American cheese and about 1/4 cup half-and-half in a saucepan over low heat; cook and stir until cheese starts to melt, about 5 minutes. Slowly start stirring half-and-half into cheese mixture, about 2 tablespoons at a time, until cheese begins to melt and mixture is smooth, about 5 minutes more. Continue adding more half-and-half.
Season cheese mixture with cumin, black pepper, and salt; add red pepper flakes, a little at a time, until desired spiciness is reached.
Cook and stir cheese dip until cheese is fully melted, adding more half-and-half if needed to thin it out, 5 to 10 minutes more. Remove from heat and top dip with chili powder.

Stovetop method: Bring 1-inch of water to a boil in a medium saucepan. Reduce the heat to medium-low and place a bowl inside the pot to create a double boiler. (The bowl should be big enough to rest above the rim of the pot without the bottom touching the water.) Add both cheeses, the half-and-half, garlic, jalapeño and ground black pepper and stir to combine. Cook, stirring occasionally, for 5 to 10 minutes, until the cheese is melted and the dip is creamy. Stir in the green chilies. Slow-cooker method: In the base of a slow-cooker, combine both cheeses, the half-and-half, garlic, jalapeño and ground black pepper and stir to combine. Cover and cook on high for 50 minutes, stirring once half-way through. Stir in the green chilies. Transfer to a serving bowl or reduce the temperature of the slow-cooker to warm and keep covered until ready to serve. Top with diced tomatoes, cilantro, and sliced jalapeño. Serve immediately.
