1 tablespoon butter
2 thinly sliced scallions
10 ounces thawed frozen peas
3/4 teaspoon coarse salt
1/4 teaspoon ground pepper
1/3 cup finely chopped fresh mint.
1 1/2 teaspoons grated lemon zest
2 tablespoons butter

Steps:

  • In a large skillet, melt 1 tablespoon butter over medium-low heat. Add 2 thinly sliced scallions (below); cook, stirring occasionally, until tender, about 2 minutes.
  • Add 3 packages (10 ounces each) thawed frozen peas, 3/4 teaspoon coarse salt, and 1/4 teaspoon ground pepper. Cook, stirring frequently, until peas are tender and heated through, about 5 minutes.
  • Add 1/3 cup finely chopped fresh mint, 1 1/2 teaspoons grated lemon zest, and 2 tablespoons butter; swirl pan until butter is creamy, 1 minute more.

6 tablespoons butter
20 ounces frozen baby peas
2 tablespoons of fresh mint, finely chopped
2 teaspoons lemon juice
1/2 teaspoon salt
1/2 teaspoon rosemary

Steps:

  • Sautee onions until tender.
  • Combine all ingredients in microwave safe dish.
  • Cover and microwave until peas are just hot, stirring as needed to cook evenly.
  • Garnish with a twist of lemon and fresh mint leaves if desired.

    1. Add the peas to a cold pan. Put the small bunch of mint on top of the peas, then boil the kettle. Pour just enough boiling water over the peas and mint to cover them, then put the pan on a high heat with a lid on. Bring back to the boil and cook until the peas are just perfect and tender – this should only be a couple of minutes. Immediately drain in a colander, then place the peas and mint into a salad-type bowl. Sprinkle with a little sea salt and freshly ground black pepper and a good squeeze of lemon juice or a swig of good-quality red or white wine vinegar. Cover the peas and mint with the olive oil (it’s important to use the best you can get, as the better the quality, the better the dish) and mix around. Put to one side for half an hour, after which the flavours will really have started to develop.
    2. There are so many things you can serve these peas with: from grilled fish to bruschetta or crostini, roasted or grilled lamb cutlets or pork, or served next to a hearty roast chicken. It’s always exciting to see lovely green peas under golden green oil.

Lay the fillets on the grill pan or baking tray, skin side up, drizzle with a little olive oil and season with salt and pepper. Grill the fish to 7 minutes without turning. By this time the fish should be cooked through and the skin satisfyingly crisp. Leave the fish to keep warm until you're ready to eat. When the water is boiling. chuck in the midget trees, broad beans and frozen peas. Bring the water back up to the boil and simmer for about 2 minutes, by which time the veg should all be cooked, but still retain a little texture. Drain the veg. While the veg are cooking. melt the butter in a frying pan over a figh heat and throw in the spring onions and courgette. Stir-fray the ingredients for 2 minutes until the are just softening. Tip the ingredients for 2 minutes untl they are just softening. Tip the midget tree mix in with the courgettes and toss the whole together. Remove from the heat, season with salt and pepper and stir through the chopped mint. Serve up the fish atop the veg and with a flourish of chopped walnuts. Squeeze a nice bit of lemon juice on top just befre serving."
