1/4 cup packed brown sugar
2 tsps McCormick® Chili Powder
1 tsp salt
1/2 tsp McCormick® Cinnamon, Ground
1/2 tsp McCormick® Garlic Powder
2 medium sweet potatoes peeled and cut into 1-inch cubes
1 medium onion cut into thin wedges
2 tbsps butter melted
1 pork tenderloin about 1 pound

Steps:

  • Preheat oven to 375°F. Mix brown sugar and seasonings in large bowl. Reserve 2 tablespoons. Add sweet potatoes, onions and butter to bowl; toss to coat well. Spread in large, shallow, foil-lined baking pan sprayed with no stick cooking spray.
  • Roast 10 minutes. Rub pork tenderloin with reserved seasoning mixture. Push sweet potatoes and onions to one side of pan. Place pork tenderloin on other side.
  • Roast 25 minutes or until pork is desired doneness and sweet potatoes are tender. Slice pork and serve with sweet potatoes and onions.

2 pounds sweet potatoes (3 medium or 2 large)
2 tablespoons olive oil
1/2 teaspoon kosher salt
2 teaspoons ground cumin
1 teaspoon chili powder
2 teaspoons ground cinnamon
2 tablespoons honey

Steps:

  • Heat the oven to 400°F. Arrange a rack in the middle of the oven and heat to 400°F. Meanwhile, cut the sweet potatoes.
  • Peel and cut the sweet potatoes. Peel the sweet potatoes and cut into 1-inch cubes.
  • Toss the potatoes with oil. Place the sweet potatoes on a rimmed baking sheet. Drizzle with the olive oil and sprinkle with the salt. If using, add the cumin and chili powder or cinnamon and toss to coat. Arrange the potatoes in a single layer.
  • Roast the potatoes. Roast for 15 minutes. Use a thin spatula flip the potatoes, and if using, add the honey and toss to coat. Roast until the potatoes are tender and browned all over, 15 to 20 minutes more.

    4. Mix the sesame oil, stock, coconut milk and two-thirds each of the lemongrass, ginger and garlic. Pour over the potatoes, tuck in the lime leaves (or squeeze the juice on top and scatter over the zest) and sprinkle over the chilli.
    5. Roast for 20 to 25 minutes, or until the potatoes are done. About 8 to 10 minutes before the cooking time is up, sit the fish on the potatoes and top with the rest of the lemongrass, ginger and garlic.
    6. When the fish is just cooked, drizzle with soy sauce, if you like. Delicious served with green beans and mangetout.
