medium onion, chopped

carrots, peeled and cut into thin rounds

2

stalks celery, thinly sliced

3

cloves garlic, thinly sliced

1

large zucchini, cut into 1/2" pieces

1

(14.5-oz.) can diced tomatoes

1

(15.5-oz.) can cannellini beans, rinsed and drained

1 c.

quinoa

1/2 tsp.

ground cumin

8 c.

low-sodium vegetable broth

8 oz.

Tuscan kale, ribs removed and leaves thinly sliced

1 tbsp.

fresh lemon juice

Crushed red pepper flakes, for serving

Steps:

  • In a large pot over medium-high heat, heat oil. Add onion, carrot, celery, and garlic and season with salt and pepper. Cook, stirring occasionally, until vegetables are soft, about 10 minutes.  Add zucchini, diced tomatoes, beans, quinoa, and cumin. Pour in broth and stir to combine. Bring to a boil and boil until quinoa is tender, about 13 minutes.  Stir in kale and cook until wilted, 1 minute more, then stir in lemon juice. Season with salt, pepper, and red pepper flakes and serve.

1 tablespoon olive oil
2 cups chopped onion
1 red bell pepper, seeded and chopped
4 cloves garlic, chopped
1?½ tablespoons mild curry powder
2 teaspoons ground ginger
¼ teaspoon cayenne pepper
6 cups vegetable broth
2 cups chopped tomatoes
1 Granny Smith apple, peeled and chopped
1 cup quinoa
3 tablespoons dried currants
½ cup chopped fresh cilantro
1 pinch sea salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat; cook and sir onion and red bell pepper until softened, 6 to 8 minutes. Add garlic, curry, ginger, and cayenne pepper to onion mixture; cook and stir until evenly coated, about 30 seconds.
  • Mix vegetable broth, tomatoes, Granny Smith apple, quinoa, and currants into onion mixture; bring to a boil. Reduce heat to low, cover pot, and simmer until quinoa is tender, 15 to 20 minutes. Stir cilantro into soup and season with sea salt and pepper.
