This quick recipe will be perfect for dinner tonight. Ready in just 20 minutes, this recipe is full of fresh mushrooms, shredded cabbage, and green onions.

12 ounces boneless pork top loin chops
1 tablespoon vegetable oil
3 cups sliced fresh button mushrooms (8 ounces)
½ cup bias-sliced green onions (4)
4 cups packaged shredded cabbage with carrot (coleslaw mix)
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
? teaspoon crushed red pepper
8 7-8 inches flour tortillas, warmed
¼ cup hoisin sauce or plum sauce

Steps:

  • Trim fat from meat. Cut meat into thin strips. In a large skillet or wok heat vegetable oil over medium-high heat. Add meat; cook and stir for 2 to 3 minutes or until slightly pink in center. Remove from skillet.
  • Add mushrooms and green onions to hot skillet. Cook about 3 minutes or until mushrooms are tender, stirring occasionally. Add cabbage with carrot; cook and stir about 1 minute or just until cabbage is wilted.
  • Return meat to skillet. Stir in soy sauce, sesame oil, and crushed red pepper; heat through. Serve meat mixture with tortillas and hoisin sauce.

2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon grated fresh ginger
1 teaspoon minced garlic
¾ pound pork tenderloin, fat trimmed and pork cut into 1/4-inch strips
2 tablespoons vegetable oil
2 cups shredded napa cabbage
1 carrot, grated
salt and ground black pepper to taste

Steps:

  • Mix soy sauce, sesame oil, ginger, and garlic in a bowl until marinade is smooth; pour into a resealable plastic bag. Add pork, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 1 hour to overnight.
  • Heat vegetable oil in a wok or large skillet over medium heat. Add cabbage and carrot; cook and stir for 1 to 2 minutes. Push cabbage mixture aside and add pork with marinade to middle of the skillet. Cook and stir until pork is cooked through, 3 to 4 minutes. Draw cabbage into the center of the skillet; cook and stir for 1 to 2 minutes. Season with salt and pepper.
