This is a fast, hearty soup for dinner; vegetarians can use vegetable broth.

1 teaspoon extra-virgin olive oil
1/2 small onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
1 garlic clove, minced
Coarse salt and ground pepper
14.5 ounces low-sodium vegetable or chicken broth
3/4 cup cooked lentils (from a 15-ounce can), rinsed and drained
2 teaspoons red-wine vinegar

Steps:

  • In a medium saucepan, heat oil over medium. Add onion, carrot, celery, and garlic; season with salt and pepper and cook, stirring occasionally, until onion softens, 3 to 5 minutes. Add broth; bring to a boil and cook 5 minutes. Add lentils and cook until soup thickens slightly, 3 to 5 minutes. Stir in vinegar and season with salt and pepper.

3 cups cooked chicken
10 cups chicken or veggie stock
2 Tbs olive/vegetable oil
3 carrots sliced into coins
1/2 onion diced
3 cloves garlic minced
1 green pepper (or 2 jalepeno seeded) diced
15 oz can petite diced tomatoes
8 oz tomato sauce
2 cups lentils washed and picked
1/4 cup fresh cilantro
1 Tbs cumin
1 Tbs ground coriander
1 1/2 tspn sea salt
1 tspn pepper
3 Tbs lime juice
Optional: hot sauce and/or smoke flavoring to taste

Steps:

  • "Cook chicken in 3 qts water for 1 hour. Test for doneness, Reserve stock. Skin and debone enough for 3 cups (two legs and 1/2 breast). Reduce/add water until stock equals 10 cups. Strain but do not defat. In a medium stock pot, heat 2 Tbs oil on medium heat. Saute carrots, onion and peppers for 4 minutes stirring to coat with oil. Add the garlic and cook 1 minute stirring constantly. Add diced tomatoes and tomato sauce, stir to blend, add chicken and stir again. Add lentils, spices, lime juice and stir to blend, add 6 cups of stock. Bring too a boil, reduce to a simmer and cook for 30 minutes. Test lentils for softness. Add more stock if lentils have absorbed liquid. Use remaining stock to add to cooled soup if lentils continue to absorb liquid. Adjust seasonings before serving."
