2 teaspoons ground sage
1-1/2 teaspoons salt
1-1/2 teaspoons pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon brown sugar

Steps:

In a bowl, combine all ingredients; mix well. Shape into eight 4-in. patties. , In a large skillet over medium heat, cook patties until a thermometer reads 160°, 3-4 minutes on each side. Remove to paper towels to drain., Freeze option: Prepare uncooked patties and freeze, covered, on a foil-lined baking sheet until firm. Transfer patties to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.
