A clever twist on traditional cookies! These hearty cookies feature fat-free butter popcorn, brown sugar, toasted wheat germ, oatmeal, coconut flakes, raisins, and sunflower seeds. The recipe is so easy to put together that you'll be able to make four dozen cookies in under 20 minutes. It doesn't require any fancy equipment, and it's also very versatile. You can omit the coconut if you'd like, or use pumpkin seeds instead of sunflower seeds, or try dried dates, prunes, or cranberries instead of the raisins. These cookies are also a fun treat to whip up on movie night as opposed to serving regular popcorn.

0.25 cup(s) All-purpose flour (or whole wheat)
2 tsp Baking powder
0.5 tsp Baking soda
0.5 tsp Table salt
0.5 cup(s) Light butter (1 stick) softened
1 cup(s) Packed brown sugar
1 item(s), large Egg(s)
1 tsp Vanilla extract
1 cup(s) Toasted wheat germ
0.5 cup(s) Uncooked oatmeal
0.5 cup(s) Unsweetened coconut flakes
1 cup(s) Raisins or dried cranberries or other dried fruit, chopped
0.5 cup(s) Sunflower seeds or chopped nuts, optional

Steps:

  • Preheat oven to 350º F.
  • Lightly spray baking sheets with cooking spray and set aside.
  • In a small bowl, stir together flour, baking powder, soda and salt; set aside.
  • Cream butter and sugar together and add egg and vanilla; mix well.
  • Stir in flour mixture and wheat germ and oatmeal until well blended.
  • Add coconut, popcorn, raisins and sunflower seeds, if desired, and mix until well blended.
  • Drop by rounded teaspoons onto baking sheet, allowing 2 inches between cookies to allow for spreading.
  • Bake 7-8 minutes or until edges are lightly browned.
  • Allow cookies to cool on pan 5 minutes before removing to racks to cool completely.
