This recipe comes courtesy of a 86 year old lady that has been cooking since she was 9 years old. The recipe has been in her family for many years. The ground pecans gives it a texture of cornbread, but there isn't any cornmeal in it. This cake is perfect for potlucks or to pack in lunchboxes.

Number Of Ingredients 7

1 cup sugar or 1/2 cup Splenda sugar substitute, for baking
1 cup brown sugar or 1/2 cup Splenda brown sugar blend
4 eggs, beaten
1 cup vegetable oil
1 1/2 cups self-rising flour
1 teaspoon vanilla
2 cups pecans, chopped very fine

Steps:

  • Preheat oven to 350 degrees; lightly grease and flour a 9x13-inch baking dish.
  • Stir together sugar, brown sugar,, eggs and oil in a medium bowl until smooth. Stir in flour and vanilla; add pecans and stir until evenly mixed.
  • Spoon into prepared pan and bake for 30 to 35 minutes.
  • Good served with a dollop of whipped cream, enjoy.

  • Put a 'seasoned' black iron frying pan into the oven with about 2 Tbsp. fresh veg. oil in it and rolled around to grease bottom and sides well. If using another type pan or possibly baking dish, grease and set aside. Combine:3/4 c. self-rising flour such as Martha White's Warm Rise 1 1/4 c. self-rising White Lily corn meal 2 tsp. Iodized table salt2 Tbsp. granulated sugar Add in and combine well. Do not over-mix:1 c. regular buttermilk (not low fat) 2 large fresh eggs1/4 c. melted Pure Butter1/4 c. warm water Cornbread should be like cake batter. If it is too thick, add in: 1/4 c. additional warm waterPour the batter into the prepared warm frying pan or possibly dish or possibly pan. Slice through it with a knife to remove any excess air bubbles. Place in center of preheated oven and bake it for 40 to 45 min, or possibly till golden and a tooth pick or possibly knife stuck in the center comes out clean. Remove to a cooling rack. Cut and serve warm with Pure Butter.
