Vegan Plum Crumble with Oats | Tinned Tomatoes image

Scottish Vegan Plum Crumble with Oats. A comforting pudding served with vanilla ice cream or custard.

Number Of Ingredients 9

12 ripe plums, stones removed and cut into wedges
1 teaspoon cornflour (corn starch)
2 tablespoons icing sugar (confectioners sugar)
100g (3/4 cup) plain flour (all-purpose flour)
50g (1/2 cup) porridge oats (rolled oats)
100g (1/2 cup) demerara sugar (or brown sugar)
pinch of salt
100g (6 tbsp) dairy-free butter or spread
2 tbsp flaked almonds (optional)

Steps:

  • Preheat the oven to 200c/180c fan/400f/gas mark 6 and grease a large baking dish.
  • Toss the plum wedges in the cornstarch, then add the icing sugar and toss again. Spread in an even layer in your baking dish.
  • Add the flour, salt, sugar and oats to a large mixing bowl and mix.
  • Now add the butter and rub in with your fingertips until you have a crumbly breadcrumb-like texture.
  • Pile the crumble mixture onto the fruit (if you are adding flaked almonds, sprinkle them over the crumble mix) and bake for 20-25 minutes until golden and crisp.
  • Serve with vegan ice cream or custard.

Steps:

  • Preheat the oven to 450 degrees F.
  • Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, sugar, salt, and pepper over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.

    1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Peel and finely chop the garlic and onions, pick and finely chop the rosemary, then finely slice the bacon.
    3. Heat a splash of oil in a casserole pan on a medium heat, add the bacon, rosemary, garlic and onion and cook for 5 minutes, or until softened, stirring occasionally.
    4. Add the minced beef, breaking it apart with the back of a spoon, then cook for 2 to 3 minutes, or until starting to brown, then pour in the wine. Leave to bubble and cook away.
    5. Meanwhile, drain and tip the sun-dried tomatoes into a food processor, blitz to a paste, then add to the pan with the tomatoes. Stir well, break the plum tomatoes apart a little.
    6. Cover with a lid then place in the oven for 1 hour, removing the lid and giving it a stir after 30 minutes – if it looks a little dry at this stage, add a splash of water to help it along.
    7. About 10 minutes before the time is up, cook the spaghetti in boiling salted water according to the packet instructions.
    8. Once the spaghetti is cooked, drain, reserving a mugful of cooking water, then return to the pan with a few spoons of Bolognese, a good grating of Parmesan and a drizzle of extra virgin olive oil.
    9. Toss to coat the spaghetti, loosening with a splash of cooking water, if needed.
    10. Divide the spaghetti between plates or bowls, add a good spoonful of Bolognese to each, then serve with a fine grating of Parmesan.

    10. To make the arrabbiata sauce, peel and finely slice the garlic, finely slice the chilli and pick the basil, finely chopping the stalks.
    11. Place the garlic, chilli and basil stalks in a pan over a medium heat with a splash of olive oil and fry for 2 minutes. Pour in the tomatoes, season and cook for 10 minutes over a medium-low heat. Transfer to a blender and blitz until smooth.
    12. Pour the vegetable oil into a deep, heavy-bottomed saucepan and place over a high heat. To test the oil is ready, drop in a few breadcrumbs – if they sizzle and float, it is ready.
    13. Carefully lower in the arancini with a slotted spoon, in batches of four, and deep-fry for 8 minutes, or until golden and crispy. Transfer to a double layer of kitchen paper to drain.
    14. Delicious served with fried capers, fresh oregano and basil leaves, grated Parmesan and the punchy arrabbiata sauce for dunking.
