Steps:
- To make yogurt dip, combine yogurt, lemon juice, and parsley in a medium bowl; mix well. Refrigerate until ready to use.
- Combine egg white and egg in a small bowl; whisk to blend. Set aside.
- Heat medium nonstick skillet over medium-high heat.
- Lightly coat skillet with spray.
- Add zucchini and green onion; cook, stirring frequently, for 3 to 4 minutes or until vegetables are softened.
- Add spinach; cook, stirring constantly, for 2 minutes, or until spinach is wilted.
- Add egg mixture; cook, over medium-low heat, stirring frequently, for 2 to 3 minutes, or until eggs are set.
- Top tortilla with egg mixture, cheese, and pepper (if desired).
- Roll tortilla burrito style.
- Serve with yogurt dip.

Steps:
- Add sausage to a skillet and cook until browned, making sure to crumble the sausage as it cooks; remove from skillet and set aside.
- Add onions and peppers to the same skillet. Saute until tender. Remove from pan and set aside.
- Add eggs to the skillet and cook, whisking, until they just begin to set. Season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
- Lay out four flour tortillas. Layer each with ¼ of the scrambled eggs, sausage and onion and peppers. Continue with 2 tablespoon salsa, and 2 tablespoons of cheese.
- Fold in opposite sides of each tortilla, then roll up, burrito-style.
- Service immediately.
