Best Homemade Apple Sauce Recipe - The Pioneer Woman image

This apple sauce recipe is the easiest, most delicious treat you can make to have as a snack, condiment, or an ingredient for other meals.

6 lb.

apples, peeled, cored, and cut into 8 slices

1 c.

apple juice or apple cider

Juice of 1 lemon

1/2 c.

brown sugar, packed

1 tsp.

cinnamon, more or less to taste

Optional ingredients: Nutmeg, maple syrup, allspice, butter, to taste

Steps:

  • Combine all ingredients in a large pot and cook over medium heat, stirring occasionally, for 25 minutes.  Carefully puree in a food processor or blender (don't fill too full; split into two portions if needed) until smooth. Store in the fridge and serve by itself, over pork chops, over ice cream, over pancakes...or any place where applesauce is needed!

8 ounces sharp Cheddar, finely grated
1 cup all-purpose flour 
4 tablespoons (1/2 stick) butter, cut into pieces 
1/2 teaspoon kosher salt 
1/2 teaspoon seasoned salt 
Pinch of cayenne 
3 tablespoons ice water 

Steps:

  • Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
  • Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.

  • To make the chicken pot pie filling, melt 2 tablespoons butter over medium heat in a large pot. Add the chopped celery, carrot, potato, onion, dried thyme, dried rosemary, and salt. Saute until soft, about 15 minutes. Add the peas and diced chicken to the pot.Add the remaining 4 tablespoons butter to the softened vegetables, and let it melt completely. Add the flour and stir to distribute, then add the chicken stock. Bring the mixture to a boil, then back down to a simmer, and let it bubble for five minutes until it has thickened. Adjust the seasoning if desired, then let this mixture cool to room temperature, then chill completely in the fridge, for at least 3 hours.In the meantime, make the pie crust. Pulse the flour and salt together in a food processor 10 times, to combine. Add the cubed butter and pulse about 20 times until the butter is chopped up into pea-sized pieces. Drizzle in the ice water and pulse until the dough comes together. You want to stop adding water when it looks crumbly, but if you pinch a bit of the dough, it holds together. Dump the dough out onto the counter, bring it together into a flat disk with your fingers, then wrap in plastic. Chill in the fridge for two hours.Once the filling and pie crust are chilled, we’re ready to bake. Preheat the oven to 400ºF.Roll the pie crust out to about 1/8 inch thick, and cut 6-inch wide circles. If you re-roll the scraps, you should be able to get 8 circles total.Place a few spoonfuls of filling into each circle, then enclose by crimping with your fingers. Repeat with the remaining ingredients, then place four pies each on two sheet pans. Cut vent slits into each pie, then brush with egg wash. Bake for 25–30 minutes until golden brown and crusty. Let the pies cool for at least 5 minutes, then enjoy! Note: You can use your own pie crust recipe or store-bought pie crust, if desired.

  • Grease an 8x8 pan with shortening. Line with two pieces of parchment, one in each direction, greasing in between. Place peanuts in a food processor and pulse until ground into fine pieces. Heat peanut butter in the microwave for 20 seconds on 50% power to warm. Stir.In another bowl, melt candy corn in 30- to 40-second increments on 50% power. Stir between each heating. Once melted, stir in peanut butter. Immediately turn out onto a sheet of parchment paper. Form into a rectangle a little larger than the pan. No need to be exact. Press the peanuts into the mixture. Fold into thirds, like a letter. Use a rolling pin to roll into a rectangle of about the same size as before. Press cornflakes on top, crushing them as you do. Fold into thirds in the same manner. Roll flat. Fold into thirds again. Once more, roll flat into a square about the size of the pan. Press into the pan, smoothing with your hands. Let the mixture set up about 15 minutes. Lift out of the pan and cut into pieces. Place on a wire rack and let cool completely. Once cool, melt chocolate wafers as directed on the package. Dip and place on a waxed paper-lined cookie sheet. Let chocolate set up before storing or packaging. Store at room temperature in an airtight container.

  • Heat a 4-quart sauce pot over medium high heat. Add olive oil and onions, sauté until translucent, about 8 minutes. Add garlic and sauté until fragrant, about 2 minutes. Add tomatoes, tomato paste, sugar, molasses and cider vinegar. Bring to a slow boil, lower to a simmer and using a spoon crush the whole tomatoes. Add remaining ingredients and continue to simmer, uncovered for 45–55 minutes, stirring occasionally, until very thick. Make sure to keep an eye on it and stir it to keep it from scorching. Use an immersion blender to puree the ketchup. If you don't have an immersion blender, transfer it carefully to a blender or food processor and process until smooth. (Optional: Strain through a fine mesh strainer.) Chill in refrigerator for at least 2 hours. The ketchup will continue to develop flavor and thicken. Enjoy on everything! Notes:1. Keep refrigerated in an airtight container up to a month.2. Sweeteners and spices and be adjusted to taste.3. Possible flavor additions: balsamic vinegar reduction, Sriracha, roasted garlic or roasted red pepper.
