I used to make what I considered a good cheese ball, and then my friend let me taste hers... and hers was a great cheese ball! Serve with assorted crackers. One year, I made several mini cheese balls and gave them as gifts with a box of nice crackers to my kid's teachers and bus drivers... it was a success! Enjoy!

Yield 1 cheese ball

Number Of Ingredients 7

1 (8 ounce) package cream cheese
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
½ cup chopped dill pickles
? cup chopped green onion
1?½ cups shredded Cheddar cheese, or more to taste
½ cup sliced almonds

Steps:

  • Mix cream cheese, mayonnaise, and Worcestershire sauce together until creamy. Stir in pickles and green onion. Add Cheddar cheese. Shape mixture into a ball.
  • Place almonds in a small skillet over medium-low heat. Stir until toasted and fragrant, about 5 minutes. Cover cheese ball with almonds.
  • Refrigerate until firm, about 1 hour.

1 teaspoon herbes de Provence
1 fresh red chile pepper
lemons (Juice)
1 tablespoon Red peppercorns
3 garlic
6 small French Goat cheese (or 1 goat cheese roll, in thick slices)
3 bay leaves
0.5 liter olive oil
salt

Steps:

  • Peel the garlic. Rinse and remove the seeds from the chili pepper. Place the garlic cloves and the goat cheese in a glass jar. Distribute the herbs, chilli pepper, peppercorns, and bay leaves. Mix lemon juice with olive oil and pour over. Let soak for about 10 days in a cool place.
  • Display the cheese with a vine leaf.
  • Goes well with cream cheese or cottage cheese.

Add half cheese mixture to pan and smooth into an even layer. Top with an even layer of 1 cup chopped pickles, then top with the rest of the cheese mixture. Smooth top and bake until slightly golden on top and set in the middle, 45 minutes to 1 hour. Remove from oven and let cool completely. Cover and chill in the refrigerator for at least 2 hours, up to overnight. When ready to serve, top with remaining pickles and dill for garnish. Serve with crackers or toasted bread.
