Homemade mayonnaise tastes fresher and brighter than anything you can buy at the store. This version is made with roasted red pepper and fresh garlic.

2 large egg yolks
1 jarred roasted red pepper, patted dry
2 garlic cloves, minced
1 teaspoon Dijon mustard
4 teaspoons fresh lemon juice
1 cup vegetable oil
Coarse salt and ground pepper

Steps:

  • Place egg yolks in a food processor. (To avoid using raw eggs, substitute yolks from pasteurized eggs.)
  • Add red pepper, garlic, mustard, and lemon juice. Pulse ingredients until well combined.
  • With motor running, add oil in a slow, steady stream (mixture should become thick and emulsified). Season with salt and pepper.
  • Refrigerate in an airtight container, up to 1 week.

2 Eggs Yolks
1 Red Pepper (roasted)
2 cloves Garlic
1 teaspoon Dijon Mustard
4 teaspoons Fresh Lime Juice
1 cup Vegetable Oil
1 teaspoon Coarse Salt
1 teaspoon Ground Black Pepper

Steps:

  • First, separate the yolks from eggs and put them in a food processor.
  • Now, add lemon juice, mustard, garlic, and red pepper and pulse the ingredients together until they are smooth.
  • Then, add the oil, salt and pepper to the processor and mix once again.
  • Transfer the mayonnaise from the food processor to an airtight container and place it in the refrigerator.
