Thanksgiving Sugar Cookies recipe | Eat Smarter USA image

Thanksgiving Sugar Cookies are easy and a big hit with kids and adults

Total Time 2 hours 2 minutes

Yield 30

Number Of Ingredients 11

14 ounces all-purpose flour
2.5 ounces Almond flour
6 ounces powdered sugar
lemon zest
1 egg
4 ounces cold butter (in chunks)
all-purpose flour (for working the dough)
12 ounces powdered sugar
2 tablespoons lemon juice
Food coloring (orange)
pink sugar (for sprinkling)

Steps:

  • On the work surface, make a mound of the flours, powdered sugar, and a pinch of lemon zest. Make a well in the center and break the egg into the well. Dot the butter around the edge of the well. Using a knife, chop the mixture together, then quickly work into a smooth dough by hand. Wrap the dough in cling wrap and chill for around 1 hour.
  • Heat the oven to 400°F,  and line a baking tray with grease-proof paper.
  • Roll the dough out on a floured surface to a thickness of approx. 1/8th-inch. Cut out circles and squares as desired and place on the baking tray. Bake in the center of the oven for around 12 minutes until straw-colored, then carefully transfer to a wire rack to cool.
  • To decorate, stir together the icing sugar and lemon juice to form a thick icing. Put part of the icing in a separate bowl and add coloring. Ice the cookies with white or orange icing and leave to dry.
  • Spoon the remaining icing into a piping bag and decorate the cookies as desired. Sprinkle with sugar and leave to dry again.
