Seriously delicious and nutty roasted Brussels sprouts using a nutritious secret ingredient: ghee. You're going to be sprout obsessed.

1 pound Brussels Sprouts, halved
2 tablespoons ghee melted
¼ tsp sea salt
freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees Fahrenheit. Halve the Brussels sprouts with a chef's knife (like this one from Zwilling) and add to a large baking tray (We love the one from Made-In.) Tip: make sure the baking tray is large enough as to not crowd the sprouts – this way they get nice and crispy. Drizzle sprouts with melted ghee and sprinkle with sea salt and freshly ground black pepper. Roast for 20-25 minutes, or until sprouts are nice and crispy. Remove from oven and devour!

This is a recipe for ghee, or clarified butter, used in many Indian dishes. It is difficult to find in small-town America! It will keep in the refrigerator for a few months.

2 pounds unsalted butter
1 pinch salt

Steps:

  • Melt butter in a large skillet over low heat until butter starts to foam and boil, about 10 minutes. Push the foam to the side, without stirring, to see if butter is clear, bright, and golden.
  • Remove skillet from heat and add salt; cool for about 2 minutes.
  • Pour butter through a fine-mesh strainer or cheesecloth to remove foam and particles into a glass container. Ghee will thicken and turn slightly translucent. Store in refrigerator.
