This Grilled Steak topped with fresh chopped tomatoes, red onion, balsamic vinegar, and olive oil is one of my favorite ways to make steak in the summer.

Number Of Ingredients 8

2 lb flank or london broil steak
1 1/2 teaspoons kosher salt and fresh black pepper (to taste)
garlic powder
1 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1/3 cup red onion (chopped)
3 to 4 medium tomatoes (chopped (about 3 1/2 cups))
1 tbsp fresh herbs such as oregano (basil or parsley)

Steps:

  • Pierce steak all over with a fork. Season generously with salt, pepper and garlic powder and set aside about 10 minutes at room temperature.
  • In a large bowl, combine onions, olive oil, balsamic, salt and pepper. Let onions sit a few minutes in the mixture to mellow a bit. Combine with tomatoes and fresh herbs and adjust seasoning if needed.
  • Heat grill or broiler on high heat. Cook steak about 7 minutes on each side for medium rare or longer to taste. Remove from grill and let it rest on a plate for about 5 minutes before slicing.
  • Slice steak thin on the diagonal; top with tomatoes and serve.

A quick and easy marinade makes this Flank Steak unforgettable. All you need is 30 extra minutes to make that steak extra delish.

1/3 c.

extra-virgin olive oil

1/4 c.

reduced-sodium soy sauce

2 tbsp.

lime (or lemon) juice

2 tbsp.

packed light brown sugar

2 lb.

flank steak

Kosher salt

Freshly ground black pepper

Steps:

  • In a large bowl, whisk together olive oil, soy sauce, lime juice, and brown sugar. Add steak and toss until coated. Marinate for at least 30 minutes, up to 2 hours. Remove steak from marinade and pat dry with paper towels. Season lightly with salt (remember that there's soy sauce in the marinade) and pepper. To grill: Preheat grill to medium-high. Place steak on grill and cook to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to thickness of your steak.) To broil: Preheat oven broiler to high. Place steak on a sheet pan and cook, turning once halfway through, until cooked to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to thickness of your steak.) Let rest before slicing and serving.

  • Preheat oven to 350°. In a small nonstick skillet, saute onion in butter until tender. In a large bowl, combine the bread crumbs, poultry seasoning, salt, 1/8 teaspoon pepper and onion., Flatten steak to 1/2-in. thickness; spread with stuffing to within 1 in. of edges. Roll up jelly-roll style, starting with a long side; tie with kitchen string. Rub with remaining pepper. , Place in an 11x7-in. baking dish coated with cooking spray. Bake, uncovered, until meat is tender, 50-55 minutes. , Remove meat and discard string. Cut into slices and keep warm. Skim fat from pan juices; pour into a small saucepan. Combine flour and broth until smooth; stir into juices. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with steak.
