1 cup dried mung beans
¼ cup or more as needed Vegetable Oil
1 sliced green onion
1 or more to taste, sliced Thai chile pepper
1 pinch salt

Steps:

  • Put the mung beans into a large container and cover with several inches of cool water.
  • Soak the beans for 1 hour.
  • Drain the mung beans and spread them out onto a flat surface. Pat gently with paper towel to blot some of the water, then air-dry the beans for 15 minutes.
  • Heat the oil in a skillet over medium heat. Cook and stir beans in hot oil for about 5 minutes until evenly browned and crunchy.
  • Drain the beans and transfer to a mixing bowl. Add chile pepper, green onion, and salt, then stir to coat.
  • Serve and enjoy.

Korean-Style Mung Bean Sprouts (Sukju Namul) image

A simple, light-flavoured dish that can be eaten itself as a side-dish, added to plain white rice, or added to other dishes like bibimbap or moo gook (Korean radish soup). It is often eaten at traditional Korean functions or holidays, but is also just a nice dish to eat for that traditional feeling.

350 gram Bean Sprouts
5 cup Water
1 tablespoon Salt
1 tablespoon Toasted White Sesame Seeds
1 clove Garlic
1 tablespoon Sesame Oil
1 teaspoon Salt
1 tablespoon Scallion
1 pinch Korean Chili Flakes

Steps:

  • Prepare the Garlic (1 clove) and Scallion (1 tablespoon) if using. Set aside.
  • Rinse the Bean Sprouts (350 gram) thoroughly, discarding any that are no good.
  • Bring the Water (5 cup) to a boil and add Salt (1 tablespoon), then add the mung bean sprouts and boil for two to three minutes.
  • While sprouts are boiling, mix the Toasted White Sesame Seeds (1 tablespoon), garlic, Salt (1 teaspoon), Sesame Oil (1 tablespoon), and scallion in a mixing bowl.
  • Add sprouts to mixing bowl and toss until the seasoning sauce is thoroughly mixed with the sprouts.
  • Plate up, adding Korean Chili Flakes (1 pinch), if desired. Serve.
