Melty Snowman Cupcake | Better Homes & Gardens image

A vanilla wafer cookie, topped with warm vanilla frosting, is all that remains of this melting snowman dessert. This adorable winter cupcake recipe will be the star of your party or bake sale!

12 vanilla wafer cookies
12 baked, unfrosted cupcakes
1 cup vanilla frosting
4 ounces semisweet chocolate, chopped
1 teaspoon shortening
6 chocolate sandwich cookies with white filling, split
12 miniature chocolate-covered peanut butter cups
12 orange jimmies

Steps:

  • Press a vanilla wafer cookie vertically into the top of each cupcake as far as it will go. Place frosting in a small microwave-safe bowl and microwave on high for 15 seconds, stirring every 5 seconds, until a thick drizzling consistency is reached. (If frosting melts to much, let it stand at room temperature to firm up slightly.) Carefully spoon frosting over cupcakes and wafers to coat, allowing some to drip down the sides.
  • For hats, place chocolate and shortening in a separate small microwave-safe bowl. Microwave on high for 1 minute, stirring after 30 seconds, until melted and smooth. Dip cookie halves into melted chocolate, letting excess drip off. Place on a sheet of waxed paper; immediately top with a miniature chocolate peanut butter cup. Chill until firm.
  • Meanwhile, place remaining chocolate in a resealable plastic bag. Snip a small hole from one corner. Add dots of melted chocolate to wafer heads for eyes, and place an orange jimmy sprinkle on each cupcake for nose. Once set, place hats near heads on each cupcake.

1 box Betty Crocker White Cake Mix
1 Cup Water
1/2 Cup Vegetable Oil
3 Eggs
Marshmallows (cut in half)
Pretzel sticks (cut in half)
Mini M&Ms
White Frosting
White Edible Glitter
Orange Cookie Icing
Black Cookie Icing

Steps:

  • Preheat oven to 350 degrees. Line muffin tin with paper cupcake liners.
  • In a large bowl, mix together cake mix, water, oil, and eggs according to package instructions.
  • Fill cupcake liners about ? full and bake for about 18 minutes. Remove from oven and allow to cool.
  • Frost cupcakes with white frosting. Pour white edible glitter on a plate and roll the edges of the frosted cupcake in the glitter to coat the edge and make them sparkle.
  • Place a half marshmallow, cut side down in center of cupcake.
  • Add two half pretzel sticks on each side of the marshmallow for the snowman’s arms.
  • Place three mini M&Ms on top of the frosting for the buttons.
  • Use the black cookie icing to make eyes. Use the orange cookie icing to make an orange triangle for the carrot nose. Allow icing to dry.
  • Serve and enjoy!
