This recipe is in response to my son's desperate pleas for those lunchables that are unhealthy, expensive, and full of ingredients I can't pronounce...lol. Since I refuse to buy them, I came up with this idea instead to compromise with him.

Cook Time 10 minutes

Yield 12 packets, 12 serving(s)

Number Of Ingredients 5

16 ounces pizza dough (I use the Pillsbury canisters)
3 cups pizza sauce
3 cups cheese, shredded
24 snack size ziploc bags
12 quarts size ziploc bags

Steps:

  • Roll out pizza dough and bake according to directions on the canister.
  • Put 1/4 cup of cheese in 12 snack size ziploc bags.
  • Put 1/4 cup of sauce in 12 snack size bags.
  • When the pizza crust is done cut into 12 squares. (The package says that 1/6 of a package is a serving which is where I am coming up with the serving sizes).
  • Place two squares in each quart size ziploc.
  • Add one cheese packet and one sauce packet in the package with the crust.
  • Freeze.
  • To eat, have your child put one package in their lunch box and by lunchtime it will the thawed and ready to eat!

DIY Pizza Lunchables customized with cheese or pepperoni's and made with a homemade pizza crust. Making your own is more time consuming, but so much cheaper in the end.

Number Of Ingredients 14

1 - recipe no fail pizza crust or (see notes for other crust substitutes)
1 - 14 oz jar pizza sauce or use a homemade sauce
3 tablespoons mozzarella cheese
3 tablespoons cheddar cheese
pepperonis
snack size sandwich bags
1 - plastic spoon
1 - sandwich or storage container
2  1/2 - cups all purpose flour
1 teaspoon salt
1 cup warm water
1 tablespoon baking powder
4 tablespoons butter, softened
1/4 oz packet yeast (2 1/4 teaspoons)

Steps:

  • To prepare the pizza dough, dissolve the yeast in warm water (110 degrees) and set aside.
  • Mix the flour, salt and baking powder together. Add the softened butter and cut into the flour mixture using a pastry blender or fork. Add the yeast mixture and stir together to combine.
  • Knead the dough on a lightly floured surface until well blended. Place the pizza dough into an oiled bowl and turn the dough to coat.
  • Cover with a towel or plastic wrap and let the dough rest for about 20 min.
  • Preheat oven to 400 degrees.
  • On a floured surface roll out each pizza dough ball into a 5 inch circle.
  • Place place each pizza round on a pizza pan (brushed with olive oil) or baking stone.
  • Using a fork prick the pizza rounds a few times to keep the dough from puffing up.
  • Bake for 8-10 minutes or until the bottoms are lightly brown.
  • Remove from oven and let cool before removing from pizza pan.
  • When completely cool place in a gallon size freezer bag and store in the freezer until ready to use.
  • Add two pizza crusts to a plastic container with a lid.
  • Add about 2-3 tablespoons pizza sauce to a snack size zip lock bag and seal.
  • Add mozzarella, cheddar cheese about 3 tablespoons of each and pepperoni if using to a second bag and seal.
  • Add everything to the plastic sandwich container and place a plastic spoon inside to spread the pizza sauce. Close or snap shut and add to your child's lunch box.
