Lobster Frites Recipe | Food & Wine image

Derrick Westbrook turns the classic moules frites into one show-stopping meal by replacing the mussels with garlic-butter drenched lobster. The double-fry method for cooking the fries ensures that they will be perfectly cooked — creamy on the inside and crispy on the outside. The first fry will cook them through, and the second will turn the outside brown and crisp. Adding Old Bay to the aioli is a genius move. Serve the meal with a bright, crisp, minerally Chablis.

¾ cup (1 1/2 sticks) unsalted butter, divided
2 large garlic cloves, finely chopped
1?½ tablespoons lemon juice
1 tablespoon minced fresh cilantro
¾ teaspoon ground black pepper
1 large egg yolk
1 tablespoon cider vinegar, or more to taste
1 garlic clove, grated
Salt
¾ cup canola oil
¼ cup olive oil
1 teaspoon Old Bay seasoning
3 to 4 cups vegetable oil, for frying
2 pounds Idaho or Russet baking potatoes, peeled if desired
Salt to taste
1 pound cooked lobster meat, cut into bite-sized pieces
2 large celery stalks, thinly sliced on an angle
2 small red bell peppers, cut lengthwise into thin strips
4 scallions, sliced

A very unusual but tasty way to eat Florida lobster.

3 cups all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon white sugar
½ teaspoon onion salt
½ teaspoon garlic salt
½ teaspoon dried parsley
½ teaspoon celery seed
½ teaspoon paprika
½ teaspoon cornstarch
1 cup milk
2 eggs, beaten
½ cup vegetable oil
4 lobster tails, shelled

Steps:

  • Mix the flour, salt, black pepper, sugar, onion salt, garlic salt, parsley, celery seed, paprika and cornstarch together in a small bowl.
  • In another small mixing bowl combine the milk and eggs, mix well.
  • Pour oil into a skillet or deep fat fryer. Heat the oil to high, approximately 400 degrees F (200 degrees C).
  • Cut the lobster tails into bite sized pieces. Dip lobster pieces one at a time into the egg mixture and then into the flour mixture. Place the lobster pieces one at a time into the skillet or deep fat fryer. Cook until lobster are golden brown.
