Savory Chinese steamed scallion buns also known as Hua Juan, literally mean flower rolls

300 g all-purpose flour
3 g salt
150-170 ml water ( , adjust the softness)
1.5 tsp. instead yeast
1 cup finely chopped scallion
oil for brushing
salt for sprinkling
Chinese five spice powder ( , optional)

Steps:

  • In a large bowl or in a stand-mixer bowl, add flour, instead yeast, water and salt. Grasp all the ingredients together and then knead the flour into smooth and soft dough. At the very beginning, it might be a little bit sticky. Just keep kneading and you will get cute dough (or you can simply use a stand mixer to knead the dough for 7-8 minutes with slow speed)
  • Cover the bowl and let the dough rest for around 1 hour (the time might be longer in winter )or until the paste ball doubles in size.
  • When the dough is double in size, get paste ball out and punch the air out. And then divide the dough into two equal halves.

"DON JUAN" EL TACO GRANDE RECIPE | COOKING CHANNEL



Everything is bigger in Texas. Juan in a Million breakfast tacos give students at the University of Texas the biggest bang for their buck. This taco includes a full pound of potatoes with eggs, bacon and cheese in a hot tortilla, all for only a song. We pared down the ingredients because many people end up sharing the restaurant's taco.

8 strips bacon
2 medium russet potatoes (about 1 pound)
1/4 teaspoon paprika
Kosher salt and freshly ground pepper
8 large eggs
1/4 cup milk
Four 8-inch flour tortillas, plus extra for serving on the side
6 ounces sharp Cheddar, grated (about 2 cups)
Salsa, for serving

Steps:

  • Lay the strips of bacon in a single layer in a large nonstick skillet. Turn the heat under the skillet to medium and cook, turning the strips occasionally, until crisp, 12 to 15 minutes. Transfer to a paper-towel-lined plate to drain (leave the drippings in the skillet), and then chop into bite-size pieces. 
  • While the bacon cooks, peel the potatoes and cut them into 1/2-inch pieces. Add the potatoes to the bacon drippings in the skillet and add the paprika, 1/4 teaspoon salt and some pepper. Cook, stirring, until the potatoes are golden brown, about 5 minutes. Add 1/2 cup water to the skillet and cover. Cook, covered, until the potatoes are very tender and just beginning to fall apart, about 10 minutes.
  • Reduce the heat to medium low. Beat the eggs with the milk, 1/2 teaspoon salt and some pepper in a large bowl until well combined and a bit foamy. Uncover the skillet and add the beaten eggs to the potatoes. Cook, stirring, until the eggs are set, about 5 minutes. Stir in the chopped bacon and remove from the heat. 
  • Wrap the tortillas, stacked, in damp paper towels and warm in the microwave, about 30 seconds. Put each one on a large plate. Evenly divide the egg mixture among the tortillas and top with the grated cheese. 
  • Serve with additional warm tortillas and salsa on the side.
