ITALIAN PLUM AND ALMOND CAKE RECIPE | BON APPÉTIT

Italian Plum and Almond Cake Recipe | Bon Appétit image

Though it can be made with other small plums, this cake is the tastiest with the Italian variety—but keep in mind that they are in their peak season only a few weeks a year, in late summer to early fall.

Provided by Rick Martinez

Yield 8 Servings

Number Of Ingredients 14

Nonstick vegetable oil spray
1 cup all-purpose flour
½ cup almond meal
1½ teaspoons baking powder
½ teaspoon kosher salt
½ cup (1 stick) unsalted butter, room temperature
¾ cup granulated sugar
¼ cup brown sugar
2 large eggs
1 teaspoon finely grated orange zest
1 teaspoon vanilla paste or vanilla extract
14 Italian plums, halved, seeded
2 tablespoons demarara sugar
Powdered sugar (for dusting)

Steps:

  • Preheat oven to 350°. Generously coat a 10" cake or springform pan with nonstick spray.
  • Whisk flour, almond meal, baking powder, and salt in a medium bowl. Using an electric mixer on medium speed, beat butter, granulated sugar, and brown sugar in a large bowl until pale and creamy, about 4 minutes. Add eggs one at a time, mixing well to incorporate after each addition, then add orange zest and vanilla paste and beat until fully incorporated, about 3 minutes. Reduce speed to low and gradually add dry ingredients; beat just until smooth and no lumps remain, about 30 seconds.
  • Scrape batter into prepared pan and arrange plums, cut side down, on top of batter, taking care not to push the plums into the batter (the batter will rise as it bakes, slightly submerging them). Sprinkle demarara sugar over and bake cake until top is golden brown, plums are very soft, and a tester inserted into the center comes out clean, 50–60 minutes. Transfer to a wire rack and let cake cool in pan at least 30 minutes. Run a sharp knife around sides of pan to loosen cake. Carefully invert cake onto a rimmed baking sheet, then invert again onto a platter or cake stand. Dust with powdered sugar just before serving.
  • Do Ahead: Cake can be made 8 hours ahead. Cover tightly and let stand at room temperature.

ORIGINAL PLUM TORTE RECIPE - NYT COOKING

Original Plum Torte Recipe - NYT Cooking image

The Times published Marian Burros’s recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. “To counter anticipated protests,” Ms. Burros wrote a few years later, “the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping.” It didn’t help. The paper was flooded with angry letters. “The appearance of the recipe, like the torte itself, is bittersweet,” wrote a reader in Tarrytown, N.Y. “Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it.” We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

Provided by Marian Burros

Total Time 1 hours 15 minutes

Yield 8 servings

Number Of Ingredients 8

3/4 to 1 cup sugar
1/2 cup unsalted butter, softened
1 cup unbleached flour, sifted
1 teaspoon baking powder
Pinch of salt (optional)
2 eggs
24 halves pitted purple plums
Sugar, lemon juice and cinnamon, for topping

Steps:

  • Heat oven to 350 degrees.
  • Cream the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs and beat well.
  • Spoon the batter into a springform pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 teaspoon of cinnamon, depending on how much you like cinnamon.
  • Bake 1 hour, approximately. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. (To serve a torte that was frozen, defrost and reheat it briefly at 300 degrees.)

Plum Cake Recipe. So far - none of the recipes call for "peeled" plums. But you do have to get the pit out. The quickest way to do that is: Cut into the plum along the seam. Make sure you cut all the way to the pit. Twist both halves in opposite directions. Remove the pit. This also works great with an avacado!
