Creamy peanut butter and sliced strawberries with oatmeal is sure to brighten any morning.

? cup 5-grain rolled cereal, such as Bob's Red Mill brand
¼ teaspoon salt
1 tablespoon natural creamy peanut butter, such as Smucker's brand
1 tablespoon sugar-free strawberry preserves, such as Smucker's brand
2 strawberries, sliced

Steps:

  • In a large microwave-safe bowl combine water, oats and salt. Microwave on 100% power (high) for 3 to 5 minutes. Remove and let stand for 1 to 2 minutes. Vigorously stir the peanut butter into the oats for about 20 seconds or until well combined and creamy.
  • Place the strawberry preserves in a microwave-safe bowl and microwave on 100% power (high) about 10 seconds or until the preserves are thinned and warmed through.
  • Divide oats between two bowls and drizzle with the strawberry preserves. Garnish each bowl with a few strawberry slices.

Made with just just 4 ingredients – bananas, oats, peanut butter and jelly, these cookies are meant to eat warm right out of the oven for a fun spin on my 3-ingredient healthy cookie recipe.

2 medium ripe bananas (mashed)
1 cup of uncooked quick oats*
2 tbsp chunk peanut butter (I like the texture)
4 teaspoons reduced sugar jelly
*Use gluten free oats such as Bob's Red Mill quick oats to make them gluten free.

Steps:

  • Preheat oven to 350°F.  Spray a non-stick cookie sheet with cooking spray or use a Silpat.
  • Combine the mashed bananas and peanut butter in a medium bowl.
  • Add the oats and mix until thoroughly combined.
  • Place batter by tablespoons (little more than level) on the cookie sheet, making an indent with the back of the measuring spoon. Repeat until you have 16 cookies.
  • Bake 15 minutes or until golden. Remove from oven and top each with 1/4 teaspoon jelly.
