One of Digital 360 Coach Lisa’s favorite quick, easy, customizable dinners is her “egg roll” in a bowl. A few of the ingredients (like jarred minced garlic and ginger, and packaged shredded vegetables) are store-bought convenience foods, prepped and ready to go, making this recipe one of those throw-it-together-in-a-minute dinners. Besides, who doesn’t love the inside of an egg roll?! Baked wonton wrapper strips add great crunch but you can cook them in an air fryer if you prefer.

1 tsp Minced garlic
1 tsp Minced ginger
10 oz Shredded uncooked napa cabbage
5 oz Shredded carrot(s)
1 medium Sweet red pepper(s) thinly sliced
0.25 cup(s) Tamari sauce
1 Tbsp Toasted sesame oil
1 large egg(s) Egg(s) whisked
1 tsp Sriracha hot sauce for garnish
1 Tbsp Uncooked scallion(s) thinly sliced, for garnish

Steps:

  • Preheat oven to 375°F. Cut wonton wrappers into thin strips; place in a single layer on a baking sheet. Lightly coat with cooking spray; bake until crisp, 6 to 8 minutes. Remove from oven; set aside.
  • Lightly coat a large skillet or wok with cooking spray; heat over medium-high heat. Add turkey; cook, breaking up any large pieces with a wooden spoon, until no longer pink, about 4 minutes. Drain any excess liquid, if necessary.
  • Push turkey to one side of pan. Add garlic and ginger; cook, stirring, until fragrant, about 30 seconds. Add cabbage, carrots, red pepper, tamari, and oil; stir to combine and cook until tender, 5 to 7 minutes.
  • Push ingredients to sides of pan to create an open space in center of pan. Add egg to center of pan; cook, stirring after 5 to 10 seconds, to gently scramble, about 30 seconds.
  • Gently stir to mix egg into vegetables. Spoon into bowls; garnish with wonton strips, Sriracha, and scallions.
  • Serving size: about 1 ½ cups

It’s a bit like playing with Play-Doh™, except more delicious, so we recommend enlisting a little helper.

Vegetable oil, water and egg called for on cookie mix pouch
2 tablespoons Gold Medal™ all-purpose flour
20 Hershey’s Kisses Brand milk chocolates, unwrapped
1/3 cup coarse white sparkling sugar

Steps:

  • Heat oven to 375°F. Line cookie sheets with cooking parchment paper. In large bowl, stir cookie mix, vegetable oil, water, egg and flour until soft dough forms.
  • Shape dough into 20 (1 1/2-inch) balls. Flatten each ball to form 2 1/2-inch circle. Press 1 milk chocolate into center of each circle, making sure to form dough around chocolate to enclose; reshape into balls. Roll in sugar. Place 2 inches apart on cookie sheets. Discard remaining sugar.
  • Bake 8 to 10 minutes or until edges are set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.
