A cheap and easy lentil salad. Makes a great side salad at dinner or a great lunch at work!

Number Of Ingredients 9

½ pound French green lentils, rinsed and drained
2 cups water
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (14 ounce) can corn, drained
¼ cup chopped fresh parsley, or to taste
? cup olive oil
? cup balsamic vinaigrette
1 tablespoon white sugar
salt and ground black pepper to taste

Steps:

  • Combine lentils and water in a saucepan; bring to a boil. Cook lentils at a boil until tender, about 20 minutes; drain.
  • Mix kidney beans, corn, and parsley in a bowl; add lentils and gently stir.
  • Whisk olive oil, balsamic vinaigrette, sugar, salt, and black pepper together in a separate bowl; drizzle over lentil mixture and gently stir.
  • Cover bowl with plastic wrap; refrigerate until lentils are completely chilled, about 1 hour.

Number Of Ingredients 10

2 tablespoons olive oil
1 small yellow onion, chopped
2 carrots, peeled and chopped
3 cups water
3/4 cup brown or French lentils
1 large or 2 small chicken or vegetable bouillon cubes
14 ounce can chopped tomatoes
2 tablespoons tomato paste (or ketchup, in a pinch)
Paprika and garlic powder, to taste
Salt and pepper, to taste

Steps:

  • In a large saucepan, saute onions and carrots in olive oil until they begin to soften. Add water and lentils. Simmer over medium heat for about 15 minutes, or until lentils begin to soften. Add boullion cube and stir to dissolve. Add canned tomatoes, tomato paste, and desired seasonings. Simmer for an additional 10 minutes or so, until lentils are completely soft and flavors are blended together.
  • Use an immersion blender to puree the soup. If you don't have an immersion blender, let the soup cool and transfer to a blender to puree. Reheat soup before serving.
