This carnival treat is easy to replicate at home with your air fryer. We doctored up pancake mix to create a sweet batter that gets light, golden and crisp. The key to a perfect coating is to get the batter's consistency right—so adjust as needed with extra mix.

Steps:
- Cut 2 sheets of parchment to fit the basket of a 3.5-quart air fryer without hanging over the edges and set aside. Preheat the air fryer to 350 degrees F.
- Whisk together the egg, milk and vanilla in a medium bowl. Add the pancake mix and sugar and whisk until smooth. The batter should be the consistency of thick cake batter to allow it to coat the cookie and hold its shape. If necessary, adjust the consistency by adding more pancake mix 1 tablespoon at a time.
- Line the basket of the air fryer with a parchment piece and spray lightly with cooking spray. Dip 6 cookies in the batter, letting the excess drip back into the bowl. Arrange the cookies on the parchment in a single layer without touching. (Make sure to place a cookie on each of the four corners so the parchment doesn’t fly up during cooking.) Air fry at 350 degrees F until the battered coating is golden brown and puffed, about 7 minutes. Remove and repeat with the remaining sheet of parchment and cookies.
- Dust the fried Oreos with confectioners' sugar just before serving.

- Microwave the pre-cooked rice separately, as per the directions given on the packaging. Add the garlic salt and goya seasoning.
- Take seasoned rice, stir onions with sausages with it.
- Add up some olives, corn, pickles, peppers, and cheese. Stream some sweet chili sauce to balance out the taste.

- Line a small baking sheet with parchment paper. In a medium shallow bowl, stir together melted semisweet chocolate and coconut oil if using. Dip each Oreo in the melted chocolate, then place on the parchment lined baking sheet. Place in the refrigerator to set, 10 minutes. Use a spoon to drizzle white chocolate onto Oreos. Return to the refrigerator to set, 10 minutes longer.

- Make Oreo whipped cream: In a large bowl using a hand mixer or the bowl of a stand mixer using the whisk attachment, beat cream until medium peaks form. Add powdered sugar and beat until smooth, then fold in 2 cups crushed Oreos. In a 9"-x-13" baking dish, spread a thin layer of Oreo whipped cream (to help the Oreos stay in place!). Top with a layer of whole Oreos, then add a layer of chocolate pudding, a thick layer of Oreo whipped cream, and a generous drizzle of chocolate sauce. Repeat, ending with the Oreo whipped cream. Top with remaining 1/2 cup crushed Oreos and cover loosely with plastic wrap. Refrigerate at least 6 hours and up to overnight to let the Oreos soften. When ready to serve, drizzle with more chocolate sauce.
