Best Hoppin’ John Recipe - How to Make Black-Eyed Pea Stew image

Ree Drummond loves to whip up her Hoppin John recipe on New Years. Try the classic dish, which is made with black-eyed peas, ham, and more.

Categories     main dish    soup

Total Time 7 hours

Prep Time 6 hours

Cook Time 1 hours

Yield 10 servings

Number Of Ingredients 12

4 tbsp.

butter

1

whole large onion, diced

4

cloves garlic, minced

1

whole green bell pepper, diced

2

stalks celery, diced

4 c.

soaked black-eyed peas

5 c.

low-sodium (or no-sodium) chicken broth

1

whole ham hock

Salt and pepper, to taste

Cayenne pepper, to taste

2 tbsp.

white vinegar

White or brown rice, for serving

Steps:

  • Soak black-eyed peas in cool water for at least 6 hours. Rinse before using. Heat butter in a large pot over medium-high heat. Add onion, garlic, green pepper, and celery and stir. Cook for 3 to 4 minutes. Stir in soaked beans, then add chicken broth, ham hock, salt & pepper, and cayenne to taste. Bring to a boil, then reduce heat and cover the pot for 30 minutes.  After 30 minutes, check the liquid level; if it's too soupy, cook with the lid off for another 15 minutes or so. If it's too thick, splash in a little more broth. Stir in vinegar, then taste for seasonings. Add more spice if needed. Serve over white or brown rice, making sure to get plenty of the cooking liquid spooned over the top. Or, you may mix the bean mixture with the rice before serving.  Variations: Add red bell pepper, canned diced tomatoes, diced jalapenos, diced ham (instead of ham hocks), or sliced bacon (instead of ham hocks). Stir in torn-up kale when 5 minutes of cooking time remain. You can also use canned, drained black-eyed peas if preferred. Just use diced ham instead of ham hock and a little less broth, as peas won't need to cook as long.

CLASSIC HOPPIN' JOHN RECIPE | SOUTHERN LIVING

Classic Hoppin' John Recipe | Southern Living image

This Southern staple serves up a generous helping of comfort and tradition. We use thick-cut bacon to get the perfect amount of smokiness, as opposed to a ham hock. A ham hock can, at times, overpower the dish. Traditionally, Hoppin' John is a one-pot recipe, but that often produces soupy results. Instead, cook the black-eyed peas with aromatics and broth until tender; then strain and reserve the liquid for later. Once the rice is done, gently stir it into the pea mixture with the liquid. This method does require washing an extra pan, but we think you'll agree that it's worth it. There are three things you do want to keep traditional about your hoppin' John though: the pork, the peas, and the rice.

Categories     Soup

Total Time 1 hours 30 minutes

Yield Serves 6

Number Of Ingredients 14

6 thick-cut bacon slices, chopped
4 celery stalks, sliced (about 1 1/2 cups)
1 medium-size yellow onion, chopped (about 1 1/2 cups)
1 small green bell pepper, finely chopped (about 1 cup)
3 garlic cloves, chopped (about 1 Tbsp.)
1 teaspoon chopped fresh thyme
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 1/2 teaspoon kosher salt, divided
8 cups lower-sodium chicken broth
4 cups fresh or frozen black-eyed peas
2 tablespoons olive oil
1 1/2 cups uncooked Carolina Gold rice
Fresh scallions, sliced

Steps:

  • Cook bacon in a Dutch oven over medium-high, stirring occasionally, until starting to crisp, about 10 minutes. Add celery, onion, bell pepper, garlic, thyme, black pepper, cayenne, and 1 teaspoon of the salt. Cook, stirring occasionally, until onion is tender, about 8 minutes. Add broth and black-eyed peas and bring to a boil over medium-high. Reduce heat to medium-low, and simmer until peas are tender, about 40 minutes. Drain pea mixture, reserving cooking liquid. Return pea mixture and 1 cup of the cooking liquid to Dutch oven. Cover to keep warm; set aside.
  • Heat oil in a medium saucepan over medium-high. Add rice and cook, stirring often, until fragrant and lightly toasted, 3 to 4 minutes. Stir in 3 cups of the reserved cooking liquid and remaining 1/2 teaspoon salt. Bring to a boil, and reduce heat to medium-low; cover and cook until rice is tender, 15 to 18 minutes. Fluff rice with a fork, and gently stir into pea mixture in Dutch oven. Stir in remaining cooking liquid, 1/4 cup at a time, until desired consistency is reached. Sprinkle servings with sliced fresh scallions.

BEST EVER BLACK-EYED PEAS RECIPE - FOOD.COM
A Southern Classic! In most Southern homes, black-eyed peas are always served on New Year's Day for good luck. I usually cook these early on New Year's Eve day. That way, if we have guests over for a party that night, I can use part of this basic recipe to make "Texas Caviar" which is a fantastic salsa/dip to eat with tortilla chips. (that recipe follows)

Fall and winter are coming and this is a dish that will warm you up on a cold day. If you simmer it long enough, it will take on a stew-like consistency. I serve it with a little chopped tomato and onion on top with skillet cornbread on the side. You can also use pintos, limas, ore northern beans in place of the black-eyes. I hope you like it!
