2 slices of bread
1 cup sliced brie cheese
1/4 cup mushrooms, sliched
1/4 cup onions, sliced
1 tablespoon balsamic vinegar
1 tablespoon garlic powder
2 tablespoon olive oil
2 tablespoon butter or margarine, 1 tbsp for each side of bread
1 tablespoon mayonnaise, 1/2 tbsp for each side of the bread

Steps:

  • In a frying pan, heat 2 tbsp of olive oil.
  • Place sliced mushrooms and onions in the pan.
  • Sprinkle 1 tbsp garlic powder.
  • Cook for about 5 minutes, until the onions are transparent.
  • Add in 1 tbsp balsamic vinegar.
  • While your veggies are cooking, butter and mayo your two slices of bread and slice your Brie cheese if you haven’t done so already.
  • Cook for another 3-5 minutes, depending on how cooked you want your veggies, and then transfer the veggies from the pan to a plate.
  • In the same frying pan, place one slice of bread (butter and mayo side down) and then place however many slices of Brie fit on it.
  • Put all your veggies on top of that.
  • Be sure to flatten the veggies out.
  • Top with your other slice of bread (butter + mayo side facing up), and cook on medium to low heat for about 5 minutes each side.
  • You can tell when the Brie is starting to melt, so once your cheese is completely melted, take it out of the pan, slice and enjoy.

Think of it as a Down East twist on a classic that allows you to get more mileage out of your lobster meat—this recipe yields four generous sandwiches, and if you add a cold, crisp pickle spear and some potato chips, you have a meal that will satisfy and delight a group of hungry foodies. To save time, order your lobster pre cooked and de-shelled, bibs optional! If you are looking to buy a lobster grilled cheese we sell them as well!

8 slices country-style white bread
28 large slices sharp white cheddar cheese
4 tablespoons (1/2 a stick) salted butter, softened
1 lb. pre-cooked fresh lobster meat, tails, claws, and knuckle meat
¼ cup chopped fresh herbs, such as parsley, tarragon, and chives, if desired

Steps:

  • Chop lobster into ½-inch pieces and set aside..
  • On a large cutting board, butter one side of each slice of bread.
  • Flip bread over, then layer half of the un-buttered sides with a slice of cheese, lobster, fresh herbs if desired, and another slice of cheese. Top with the remaining slices of bread buttered-side up.
  • Heat a large heavy-bottomed skillet over medium heat. Add the sandwiches in batches, if necessary, and cook until golden brown on both sides, about 3 to 5 minutes per side. Slice each in half and serve immediately. Enjoy!
