Steps:
1. Put the sweet chilli sauce and lemon juice in a small serving bowl and mix together to make a dipping sauce. Cover and set aside.
2. Cut the tofu puffs in half and pat dry with paper towels.
3. Mix the cornflour, salt, pepper and sugar together in a large bowl. In another bowl, lightly beat the egg whites.
4. Working in batches, dip the tofu pieces into the beaten egg white, then toss them in the cornflour mixture, shaking off any excess.
5. Fill a deep heavy-based saucepan or wok one-third full of peanut oil and heat to 180°C (350°F), or until a cube of bread dropped into the oil browns in 15 seconds. Cook the tofu in batches for 1-2 minutes, or until crisp. Drain well on paper towels and serve immediately, with the dipping sauce and lemon wedges.

Steps:
- Mix together vanilla instant pudding mix, cream and milk. Cover and refrigerate to set.
- Preheat oven to 425 degrees F (220 degrees C).
- In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.
- Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.
- When the shells are cool, either split and fill them with the pudding mixture, or use a pastry bag to pipe the pudding into the shells.
