Best Mexican Rice Recipe - How To Make Mexican Rice image

carrots, peeled and diced

small green pepper, diced

small onion, chopped

cloves garlic, thinly sliced

450 g

long-grain rice, rinsed and drained

1 tbsp.

tomato paste

600 mL

low-sodium chicken stock

1

(400g) can fire-roasted diced tomatoes, drained

225 g

tomato sauce

3/4 tsp.

ground cumin

1/2 tsp.

dried oregano

salt

Freshly ground black pepper

5 g

finely chopped coriander

Steps:

  • In a large pan over medium-high heat, heat oil. Add carrots, bell pepper, onion, and garlic, and cook, stirring frequently, until onions have become translucent, about 5 minutes. Add rice and tomato paste and cook, stirring, until grains are toasted, 2 t0 3 minutes. Pour in stock, diced tomatoes, and tomato sauce and season with cumin, oregano, 1 teaspoon salt, and ½ teaspoon pepper. Bring to a boil. Cover and reduce heat to low.  Simmer until rice is cooked through and liquid is absorbed, stirring occasionally, about 17 minutes.  Stir in coriander before serving.

This easy to make side dish tastes just like the rice from your favorite Mexican restaurant.

Number Of Ingredients 11

2 tablespoons butter
1 cup uncooked white rice
3 cloves garlic minced
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon pepper
Pinch of cayenne pepper
1/4 cup finely diced onion
1/4 cup tomato sauce
1 3/4 cups chicken broth
1-2 tablespoons fresh chopped cilantro

Steps:

  • Melt butter in a large saucepan over medium heat. Add rice and cook, stirring constantly, until just golden. Add garlic, cumin, chili powder, pepper and cayenne and cook a few minutes more.
  • Stir in onions and cook until onions are tender. Stir in tomato sauce and chicken broth and bring to a boil.
  • Reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is tender. Fluff with a fork. Stir in cilantro.
