We love to entertain, this is one of my favorite 'special' recipes to welcome dinner guests. The nuts add an elegant touch, and it fills the house with a great aroma. —Penny Davis, Newman Lake, Washington

Number Of Ingredients 8

2 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1/8 to 1/4 teaspoon cayenne pepper
1 tablespoon butter
3 tablespoons honey
2 tablespoons finely chopped pecans

Steps:

  • Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle with seasonings., In a large nonstick skillet, heat butter over medium heat; brown chicken on both sides. Cook, covered, until chicken is no longer pink, 6-8 minutes, turning once. Drizzle with honey and sprinkle with pecans. Cook, covered, until chicken is glazed, 2-3 minutes.

2 tablespoons lite soy sauce
2 tablespoons honey
2 cups wheat cereal squares, crushed
? cup finely chopped pecans
1 teaspoon salt
1 teaspoon pepper
6 skinned and boned chicken breast halves
Vegetable cooking spray

Steps:

  • Stir together soy sauce and honey; set mixture aside.
  • Combine cereal crumbs and pecans.
  • Sprinkle salt and pepper evenly over chicken. Dip both sides of chicken breast in soy sauce mixture; dredge in crumb mixture to coat.
  • Arrange chicken breasts on an aluminum-foil lined baking sheet coated with cooking spray.
  • Bake at 425° for 15 to 20 minutes.
