Steps:

• Preheat oven to 350°F.
• In a medium bowl, combine the first 6 ingredients until blended, then spoon into shallow 1-quart baking dish.

  Alternative slow cooker method: Mix first 6 ingredients together in a medium bowl, transfer mixture to a slow cooker, and cook on high for 1½ to 2 hours. Garnish with green onions, if desired, and serve warm with crackers, chips, pretzels, and/or vegetables.

• Spread olive oil in the bottom of a 9x13-inch casserole dish. Place chicken thighs in the dish side by side and sprinkle on half of the ranch seasoning packet.
• Top with the chopped broccoli and sliced onions. Sprinkle on the rest of the ranch packet and the shredded cheddar cheese.
• Bake for 35-40 minutes, until the vegetables are crisp-tender and the chicken is cooked through. Serve hot.
