fresh flat-leaf parsley, chopped

2 tsp.

fresh thyme leaves

large eggs, beaten

Steps:

  • Preheat oven to 375°F. Oil a 2-quart shallow casserole dish (or 3 quart if not stuffing the turkey). Place bread on a rimmed baking sheet and toast, stirring once, until golden brown, 15 to 20 minutes. Meanwhile, heat oil in a large skillet over medium heat. Add onions and season with salt and pepper. Cook, stirring occasionally, until very tender and beginning to turn golden brown, 6 to 8 minutes. Add celery and cook, stirring occasionally, until tender, 6 to 7 minutes. Add stock and bring to a boil. Stir in the parsley and thyme. Stir together bread, vegetables, and eggs in a bowl. If desired, stuff half the mixture into the main cavity of the turkey; transfer the remaining half to the prepared baking dish (if not stuffing the turkey, transfer all the mixture to the prepared baking dish). Cover baking dish with foil and bake for 10 minutes. Remove the foil and bake until golden brown, 15 to 20 minutes.

2 stalks celery, chopped
1 large onion, chopped
1 tablespoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
1 1/2 teaspoons poultry seasoning
1/2 teaspoon salt
10 cups soft bread cubes (10 to 15 slices)
3/4 cup Progresso™ chicken broth (from 32-oz carton)

Steps:

  • Heat oven to 350°F. Spray 13 x 9-inch (3-quart) glass baking dish with cooking spray. In 4-quart Dutch oven, melt butter over medium-high heat. Cook celery and onion in butter about 5 minutes or just until tender. Stir in thyme, poultry seasoning and salt.
  • Add bread cubes; toss to coat. Add chicken broth; toss until well mixed. (Add up to 1/2 cup more broth if moister stuffing is desired.)
  • Spoon into baking dish. Cover with foil. Bake 20 minutes; uncover, and bake 25 to 30 minutes or until golden brown and heated through.

Just before baking, loosely stuff turkey. Place remaining stuffing in a greased 1-1/2-qt. baking dish; refrigerate., Skewer openings of turkey; tie drumsticks together with kitchen string. Place on a rack in a roasting pan. Brush with melted butter. Bake, uncovered, at 325° for 3-1/2 to 4 hours or until a thermometer reads 165° when inserted in center of stuffing and the thigh reaches at least 170°. Bake additional stuffing, covered, for 45-60 minutes or until heated through., When the turkey begins to brown, baste with drippings (if turkey browns too quickly, cover loosely with foil). Cover turkey and let stand for 20 minutes before removing stuffing and carving. If desired, thicken pan drippings for gravy.
