Salmon Pasta Salad Recipe: How to Make It image

This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

Number Of Ingredients 12

1 package (8 ounces) spiral pasta, cooked and drained
2 cups fully cooked salmon chunks or 1 can (14-3/4 ounces) pink salmon, drained, bones and skin removed
1-1/2 cups quartered cherry tomatoes
1 medium cucumber, quartered and sliced
1 small red onion, sliced
1/2 cup canola oil
1/3 cup fresh lemon or lime juice
1-1/2 teaspoons dill weed
1 garlic clove, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 head lettuce, torn

Steps:

  • In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

This easy pasta salad with smoked salmon and peas and a creamy buttermilk-herb dressing takes just 20 minutes to make. Frozen peas are cooked right in the same pot as the pasta, and the dressing is whipped up in the serving bowl, saving you time and dishes! It's the perfect fresh and healthy dinner to add to your weeknight rotation and would also be lovely for a luncheon or brunch. But given how easy it is, it could also be an elegant take-to-work lunch.

8 ounces large shell pasta
1 cup frozen peas
½ cup canola mayonnaise
½ cup nonfat buttermilk
2 tablespoons thinly sliced chives
2 tablespoons lemon juice
1?½ teaspoons chopped fresh tarragon
2 large garlic cloves, minced
½ teaspoon salt
½ teaspoon ground pepper
2 cups packed baby arugula
6 ounces smoked salmon, torn into 1-inch pieces

Steps:

  • Cook pasta according to package directions, omitting salt; add peas to the pot during the final 1 minute of cook time. Drain, rinse with cold water and drain well.
  • Whisk mayonnaise, buttermilk, chives, lemon juice, tarragon, garlic, salt and pepper in a large bowl. Add the pasta-pea mixture, arugula and smoked salmon; stir gently until well combined.
