4 skinless fish fillets (eg. perch, snapper, jewfish, red mullet, ocean trout, John dory)
1½ tablespoons lemon pepper
1–2 tablespoons chopped fresh dill
? cup (80 ml/2¾ fl oz) lemon juice
2 tablespoons lemon juice
½ cup (125 ml/4 fl oz) cream
40 g (1¼ oz) butter, chopped
2 tablespoons chopped fresh chives

Steps:

  • 1. Sprinkle the fish fillets with the lemon pepper and place in a shallow non-metallic dish. Mix the dill with the lemon juice, then pour over the fish, cover and refrigerate for several hours.

    2. Heat the barbecue and cook the fish on a hot lightly greased barbecue flatplate for 2–3 minutes each side, or until the flesh flakes easily when tested with a fork.

    3. For the lemon butter sauce, simmer the lemon juice in a small pan until reduced by half. Stir in the cream. Remove from the heat and whisk in the butter a little at a time until all the butter has melted. Stir in the chives.

    4. Serve the fish with the lemon butter sauce poured over the top. The fish can be garnished with fresh dill sprigs and perhaps served with barbecued citrus slices and fresh bread.

3 tablespoons chopped shallot
2 tablespoons fresh lemon juice
1/2 cup (1 stick) chilled unsalted butter, cut into 8 pieces
1 1/2 tablespoons chopped fresh dill

Steps:

  • Boil wine, shallot and lemon juice in medium saucepan over high heat until reduced to 1/4 cup, about 6 minutes. Reduce heat to low; add butter, 1 piece at a time, whisking until melted before adding more. Remove pan from heat. Stir in dill. Season to taste with salt and pepper.
