½ cup water
? cup light soy sauce
¼ cup vegetable oil
3 tablespoons lemon pepper seasoning
2 teaspoons minced garlic
6 boneless pork loin chops, trimmed of fat

Steps:

  • Mix water, soy sauce, vegetable oil, lemon pepper seasoning, and minced garlic in a deep bowl; add pork chops and marinate in refrigerator at least 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove pork chops from the marinade and shake off excess. Discard the remaining marinade.
  • Cook the pork chops on the preheated grill until no longer pink in the center, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

These delicious sandwiches are filled with sliced, blackened pork chops and a quick tomato pepper relish. Totally unique and totally delicious.

1/2 lb cherry or grape tomatoes, quartered
1/4 cup sugar
1/2 red pepper, minced
1 Serrano pepper, seeded and diced
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon dried thyme
1 teaspoon black pepper
1 teaspoon kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon dried cayenne powder
4 medium boneless pork chops
2 tablespoons olive oil
4 sandwich buns
1 cup greens of choice (spinach, spring mix, arugula, etc.)
Sliced red onions, for garnish

Steps:

  • Preheat oven to 350°F.
  • Bring tomato jam ingredients to a simmer in a small saucepan. When the tomatoes start to break down, reduce heat to low and continue simmering for about 20 minutes, stirring regularly, until mixture thickens. Remove from heat; mixture will continue to thicken as it cools.
  • Meanwhile, combine ingredients for blackened seasoning and sprinkle liberally on both sides of the pork chops.
  • Add a drizzle of olive oil to a large skillet over medium heat. Once it’s hot, add pork chops and sear for 2 to 3 minutes per side. Transfer pork chops to oven to finish cooking (4 to 6 minutes, depending on thickness). Pork chops are done when the internal temperature registers at least 145°F at the thickest point.
  • Remove pork chops from heat and let rest for a few minutes before slicing into strips.
  • To make sandwiches, add greens and onions to the bottom half of buns, followed by sliced blackened pork chops. Top with tomato pepper jam, and enjoy.
