Grilled Peaches with Vanilla Ice Cream is a simple and crazy flavorful dessert using the best of summers peaches and a scoop of vanilla ice cream.

4 Peach
1 pint Vanilla Ice Cream
4 tablespoon Honey
1/4 cup Pecans

Steps:

  • Turn on your grill and turn it up to high heat.
  • Put the Peach (4) flesh-side down on the grill and close the lid for 5 minutes. They should have grill marks and be nice & tender.
  • Flip them over and cook with the lid closed for another 5 minutes. Remove and set aside.
  • Heat a small sauté pan to medium low heat and add the chopped pecans. Flip them around as they roast for a few minutes. You just want them to warm up and release their oils and not necessarily color. Remove and set aside.
  • Fill your bowl with grilled peaches, a couple scoops of Vanilla Ice Cream (1 pint), a drizzle of Honey (4 tablespoon) and some Pecans (1/4 cup).

After about 15 minutes on the grill, the cinnamon-sugar topping caramelizes and beautiful, deep-brown grill marks appear on the fruit.  These grilled peaches have a rich and smoky-sweet flavor that you’ll crave all summer long.

2 tablespoons light brown sugar
½ teaspoon cinnamon
4 fresh peaches
grapeseed oil (or vegetable oil)
vanilla ice cream

Steps:

  • In a small bowl, combine brown sugar and cinnamon. Cut peaches along the seam all the way around and twist halves off the pit. Brush cut sides with grapeseed oil or vegetable oil. Cook, cut side down, on a hot grill until fruit has grill marks, 3 to 4 minutes. Brush tops with oil, turn over, and move to indirect heat. Sprinkle cut sides with cinnamon sugar. Cover grill and cook until sugar is melted and fruit is tender, 10 to 15 minutes. Serve with vanilla ice cream (sprinkle on extra cinnamon sugar if you like).
