Grilling the ingredients before mashing + mixing gives your guacamole even more flavor.

Number Of Ingredients 16

1 large red onion
peeled
cut into rings and grilled
1 jalapeño
stemmed
seeded and sliced in half
2 tomatoes
sliced in half
4 avocados
halved and pitted
Juice of 2 to 3 limes
Salt and pepper
A handful of cilantro
Tortilla chips
sliced carrots and sliced cucumber
for serving

Steps:

  • Heat a grill to a high
  • Drizzle onions, jalapeño, tomatoes and avocados with olive oil
  • Once grill is hot, place everything onto a grill cut-side down and grill until charred
  • Remove from grill and cool
  • Once cool, chop onions and place into a bowl with lime juice and salt
  • Let sit for a few minutes
  • Meanwhile, chop jalapeño and tomato
  • Add to bowl with onions
  • Add in the avocado and mash to desired consistency
  • Stir in cilantro to taste

medium jalapeños

cloves garlic, unpeeled

Juice of 1½ limes

1/2

large red onion, chopped (about ½ cup)

medium tomato, seeds removed and chopped

1/4 c.

freshly chopped cilantro

Steps:

  • Preheat grill or grill pan over medium heat. Halve avocados and remove pits. Place avocados, cut side down, on preheated grill, along with jalapeños and garlic. Cook, turning garlic and jalapeños occasionally, until jalapeños and avocado are charred and garlic feels soft. Scoop grilled avocado into a large bowl. Peel garlic cloves and add to bowl with avocado. Add lime juice and use a fork to coarsely mash avocado and garlic clove together.  Remove stems from jalapeños and cut open. Scrape out seeds, then flip peppers over and scrape off any charred bits of skin. Mince peppers, then add to the bowl with avocado, along with tomato and cilantro. Season with salt and stir to combine.
