Cajun Appetizer Meatballs Recipe | Allrecipes image

This is a great appetizer meatball recipe with a little kick to it. It can be made ahead and frozen in resealable plastic bags, then added to sauce and heated.

1 pound lean ground beef
1 ½ teaspoons hot pepper sauce
2 tablespoons Cajun seasoning
1 tablespoon Worcestershire sauce
1 tablespoon dried parsley
¼ cup finely chopped onion
¼ cup fresh bread crumbs
¼ cup milk
1 egg
½ cup barbeque sauce
½ cup peach preserves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
  • In a large bowl, mix thoroughly the ground beef, hot pepper sauce, Cajun seasoning, Worcestershire sauce, parsley, onion, bread crumbs, milk, and egg.
  • Form the mixture into golf ball sized meatballs and place on the prepared baking sheet. Bake in preheated oven for 30 to 40 minutes, or until there is no pink left in the middle.
  • In a small bowl, combine the barbeque sauce and peach preserves.
  • When meatballs are done, place in a serving dish and cover with the barbeque sauce mixture. Toss to coat.

Number Of Ingredients 5

1 lb pecan halves
3 egg whites
1 cup sugar
1/2 cup butter
Dash of salt

Steps:

  • Toast pecans by spreading in one layer on a cookie sheet and baking at 325 degrees until light brown (about ten minutes).
  • Beat egg whites until frothy. Add sugar and beat until stiff. Fold in nuts.
  • Melt butter in 10x15 inch jelly roll pan/cookie sheet. Spread nut mixture over butter and bake at 325 for 30 minutes. Watch them carefully as they're easy to burn.
  • Stir carefully every 10 minutes until light brown (most of the pecans will really have a slightly grayish color). Keep in a closed container or tin.

  • Preheat oven to 425°. In a small bowl, combine oil, lemon juice, Cajun seasoning and thyme. In another bowl, combine pecans, cheese, bread crumbs, parsley and 1 tablespoon of the oil mixture., Place catfish in a greased 15x10x1-in. baking pan. Brush with remaining oil mixture. Spread pecan mixture over fillets. Bake until fish flakes easily with a fork, 10-15 minutes.
