1 cup dark corn syrup
1/2 cup light corn syrup
3 whole eggs
1/4 teaspoon salt
1 teaspoon vanilla
3 tablespoons melted butter

Steps:

  • Preheat oven to 300*. Mix all of the ingredients together, & pour filling into a 9" unbaked pie shell. Bake for 45 minutes or until set.

My dad's favorite thing to eat in the world. My grandmother has been making this pie for so many years and it has been a favorite of many, many people. This recipe was published by her church's cookbook- The Cherokee Hills Baptist Church, Cookbook IV, Our Favorite Recipes- Women's Ministry, 2007.

Number Of Ingredients 10

1 pie crust, 9 inch, uncooked
3 eggs, large
1 cup white sugar
1 tablespoon flour, rounded
1/4 cup Dark Karo syrup
3/4 cup light Karo syrup
2 tablespoons oleo, melted
1/2 cup pecans, chopped
1 teaspoon vanilla
1 cup pecans, halved, for top of pie

Steps:

  • Heat oven to 400.
  • Beat eggs.
  • Add sugar and flour until sugar is dissolved.
  • Add syrup, melted butter, pecans and vanilla. Mix well.
  • Pour into pie shell.
  • Beginning at outer edge of filling, place a row of pecan halves around top. Continue with other rounds until top is covered.
  • Carefully place pie in oven.
  • Bake at 400 for 15 minutes. Reduce heat to 350.
  • Make a tent of aluminum foil; place over pie. Be careful not to touch filling!
  • Bake around one more hour, or until filling is set.
  • Remove from oven.

  • Note to chef: Optional Piecrust Recipe (2 pies) 2 1/8 c. sifted all purpose white flour 1 1/4 tsp. salt 2/3 c. chilled shortening 6-7 Tbsp. ice water Mix all together. Wrap in plastic and refrigerate for 30 mins. before rolling out. After rolling pie dough out on plastic wrap, transport onto pie tins, crimp edges and return back to the refrigerator until dough is cold. Bake piecrust @ 500 for 7-8 mins. •••••••••••••••••• Note to my sister Michelle S, from Cynthia S: I made this pie 11/25/15 and added 3/4c. Crisco ( instead of 2/3c. for piecrust, so that dough would easily roll out) and then I used the the usual 4 Tbsp salted butter for pie filling (reminder: this makes 2 pies) . Mother thought pies were slightly on the oily side after sticking a toothpick in them in the oven. Yet, when pie cooled, they seemed perfectly fine. Perhaps, next time, go back to 2/3 crisco and try 3 Tbsp butter for filling? Or, try a butter piecrust recipe which I'll post soon. Also, please let me know if you ever find a fabulous gluten free piecrust recipe. Enjoy! ??
