2 (1/4-ounce) packages active dry yeast
1 3/4 cups warm (110°F) water
2 cups whole wheat flour
1/4 cup cornmeal
1/4 cup Land O Lakes® Butter melted
1/4 cup honey
1 large Land O Lakes® Egg slightly beaten
1 teaspoon salt
3 to 3 1/2 cups bread flour
Topping
2 tablespoons Land O Lakes® Butter melted
1 tablespoon cornmeal
Land O Lakes® Butter with Olive Oil & Sea Salt

Steps:

  • Dissolve yeast in warm water in bowl. Let stand 10 minutes.
  • Add whole wheat flour, cornmeal, 1/4 cup melted butter, honey, egg and salt to yeast mixture; mix well. Stir in 3 cups bread flour, 1/2 cup at a time, until dough pulls away from sides of bowl.
  • Turn dough onto lightly floured surface. Knead 10 minutes until smooth and elastic, using an additional 1/2 cup bread flour, if necessary. Place into greased bowl; turn greased-side up. Cover; let rise in warm place 20 minutes until doubled in size. (Dough is ready if indentation remains when touched.)
  • Punch dough down; divide in half. Shape each half into 12 balls; flouring hands if necessary. Place 1 inch apart onto greased baking sheets. Cover, let rise in warm place 15 minutes until double in size. Lightly cut 1/8-inch deep “X” into top of each roll with sharp serrated knife.
  • Heat oven to 400°F.
  • Bake 12-15 minutes or until golden brown. Remove from oven; brush with melted butter. Sprinkle with cornmeal.
  • Serve warm with butter with olive oil and sea salt.

1 1/3 cups plus 1.5 Tbsp warm water (110?)
1 Tbsp yeast active dry
3 Tbsp dry milk powder
2 Tbsp vegetable oil
2 Tbsp honey or real maple syrup
2 teaspoons salt
1 egg
1 cup whole wheat flour
2 1/2 cups bread flour
3/4 cup 7 grain mix (flax, oats, etc)

Steps:

  • Add warm water to bread machine. Sprinkle in yeast and let set for 5-10 minutes. This gives the yeast time to activate.
  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>Place the remaining ingredients into the bread machine. Set your bread machine to "dough" setting and press "start".</span>
  • <span></span>When the bread machine "beeps", you are ready to start forming the dough. I start by cutting the dough in halves until I get the desired size. This helps stay consistent in bun size. I knead each dough ball then shape into a ball. Place final dough into a greased baking pan, allowing enough space between each dough ball for room to rise (approximately 1/2 inch). If you prefer to make bread, skip cutting the dough and knead and place into bread pan(s).
  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>Cover buns with moist towel or cling wrap and let rise in a warm spot, preferable between 80?-90?. May take up to 2-4 hours depending on temperature of room.</span>
  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>Remove towel or cling wrap and bake at 350? until golden brown (approx. 10-12 minutes).</span>
