This is an old, old recipe from relatives in Georgia.

Yield 19 pounds

19 pounds firm ripe peaches
7 pounds white sugar
2 cups distilled white vinegar
1 quart water
24 whole cloves
3 tablespoons crushed cinnamon stick

Steps:

  • Peel peaches and set aside. In a large pot over medium high heat, boil sugar, vinegar and water until the syrup is moderately thick.
  • Add cloves, cinnamon and peaches. Bring to boil stirring occasionally until the peaches can be pierced to the pit with a fork.
  • Fill sterilized canning jars with peaches. Continue boiling syrup until heavy and add to peaches to cover.
  • In a large stock pot, pour water half way to top with boiling water. Using a holder, carefully lower jars into pot. Leave a 2-inch space between jars. Add more boiling water to cover them, about 2 inches above the tops. Bring to a boil and cover, processing for 35 minutes. Remove jars from pot. Put jars on a wood or cloth surface, several inches apart and allow to cool. Jars will be sealed.

This drink is a favorite among our guests when we throw cocktail parties! Sometimes I serve with a lemon slice and a maraschino cherry.

2 ounces peach schnapps
1 ounce vodka (good quality)
4 ounces lemonade
1/8-1/4 fluid ounce grenadine

Steps:

  • Put all ingredients in a shaker with crushed ice and shake.
  • Serve!

When I was a little girl, I remember us driving from Alabama over to Georgia to pick peaches. When we got home, mama would peel and slice them and freeze them for later use. And, we would have a cobbler that night. There were 4 kids and our mom and dad, we could devour mama's cobbler in one sitting! I've made a few minor changes to the way mama made hers.   • Transfer the pie to the oven and place a baking sheet in the bottom to catch any drips. Bake for 30 minutes. Reduce the oven temperature to 375°, cover the edge of the pie with foil and bake for about 40 minutes longer, until the filling is bubbling and the crust is deeply golden on the top and bottom. Transfer the pie to a rack to cool completely. Serve with Bourbon Whipped Cream.
