- In a container, combine oil, vinegar, honey, and garlic. Cover, and shake until blended. Set aside for 45 minutes, to allow flavors to combine. Shake again before serving.

When fermenting honey with garlic, honey takes on intensely savory garlic flavors and becomes super runny and perfect for drizzling on pretty much anything.

Steps:
- In a 16 ounce jar add peeled and crushed garlic cloves.
- Pour over 1 cup of honey to cover. You’ll want to leave a couple inches of head space to give the honey room to expand during fermentation. Cover with a lid.
- Every day or two open your jar to let any built up CO2 escape. Recover with your lid and rotate your jar to re-coat your garlic cloves. It is totally normal that they float to the top.
- You can use this ferment at any time, but we like waiting a month so that the garlic has fully mellowed. Store at room temperature.
