- Bring a pot of water to a boil and while you are getting the sauce ready, cook bowtie pasta as directed until they are firm and not mushy. Chop the garlic, onion, peppers and basil. In a large pan heat the oil and then add the garlic and onions. Cook for about a minute and then add the peppers. Sprinkle with the crushed red pepper (we wanted it to be hot, so we added a lot!) fresh ground pepper and salt. Cook until the peppers are soft, but not mushy. Chop up all the tomatoes and put the juice and pieces in a bowl. We used a mini chopper to do this because we wanted the tomatoes to be well chopped and wanted a lot of juice. Add the tomatoes to the pan and bring to a boil for a few minutes uncovered. Add in basil, lower heat and let it cook for another few minutes stirring almost constantly. Stir in a few pinches of sugar. The amount will really depend on how flavorful, or not flavorful your tomatoes are. Add in the pasta, stir and remove from heat. Cover and let sit about 5-10 minutes. Stirring at least once. We served it with a chardonnay because we wanted something light that wouldn't take away from the taste of the veggies and sauce. Once on the plate, put some fresh cracked pepper over the pasta and for your non-vegan friends some grated parmesan cheese.

- Preheat the oven to 375º. Bring a large pot of salted water to a boil and cook pasta for 10-12 minutes, or until tender. Drain and set aside. In a medium size pan over medium heat, add ground beef, breaking up meat with a wooden spoon. Add salt, pepper, adobo and paprika and cook until beef is no longer pink, then drain. Add sausage to ground beef and cook for another 4 mins; drain again if needed. Add onions and peppers to meat mixture and cook until softened. Stir in sauce and rosemary garlic seasoning, if using, to beef mixture and simmer on low for about 3-5 minutes. In a large casserole dish, combine cooked pasta with meat mixture and top with cheese. Bake for 8-12 minutes, until cheese is bubbly and melted. Let stand for 5 minutes.
